A simply enchanting restaurant, run by young, passionate, and approachable people who put you at ease from the moment you arrive.
Let's start with one thing: this isn't your typical Michelin-starred restaurant. If you decide to come here, set aside traditional expectations and open your mind to a completely different experience.
As soon as you step inside, you're greeted directly by the staff: four chefs and a sommelier. There's no real dining room with waiters; they guide you through the entire experience. You'll initially be seated in a small lounge, where you can sip a drink while savoring the amuse-bouche prepared by the kitchen.
The entire experience is accompanied by a refined selection of electronic music, carefully selected and designed to match the menu and the atmosphere of the moment.
We eagerly await the arrival of all our guests, as dinner is a convivial affair: we sit together around a raised counter, where we can watch the chefs prepare each dish before our eyes. It's a true spectacle.
I had the pleasure of trying their "Confine" menu, a creative journey that plays on the idea of blurring the lines between sweet and savory, offering surprising and unconventional dishes.
I was impressed by every course, but some dishes will remain etched in my memory: the spaghetti in blueberry extract with grated white chocolate and marinated caviar, a combination as bold as it was perfectly executed; and the eggplant essence, an intense cream made from a full 1 kg of eggplant per serving.
Be prepared to experience something unique: sometimes you'll be asked to lick your plate to fully savor each element, or to accompany your dishes with cocktails made with select teas and sakes. It's a sensory journey that continually surprises and, by the end of the evening, will leave you wondering how such original and perfectly balanced pairings are possible.
