18/06/2025: Excellent conclusion for a quick visit to the Langhe.
The staff is friendly and the service is attentive, with a precise explanation of the dishes. The location is splendid: we had lunch in the outdoor garden, very well-kept and pleasant.
The menu offers both the possibility of choosing à la carte, and two menus - one dedicated to local specialties and one based on fish.
The dishes are well executed, abundant and very tasty.
The selection of desserts is also interesting, all of which are made by them.
Convenient parking nearby.
01/06/2025: In the authentic heart of Dogliani, where the hills stretch out like the pages of a novel and the air smells of history and lives lived slowly, stands Il Verso del Ghiottone, a restaurant listed in the Michelin Guide, which perfectly embodies the poetry of the Piedmontese table.
The cuisine is a hymn to the balance between tradition and creativity. The appetizers surprise with harmony and originality, such as the “arancinetta allo zafferano su crema di ceci e polvere di olive nere”, refined and enveloping, and the battuta di fassona, embellished with a crunchy wafer with Grana and caramelized onion, which gives depth and freshness to every bite.
The first course, the classic tagliarini with white sausage ragù, conquers for the delicacy of the handmade dough and the savoury intensity of the seasoning. The second course, a boneless rabbit breast, stuffed with sausage and vegetables, is a true gastronomic narration: precise, balanced, respectful of peasant memory but with a modern touch.
The dessert is a caress: the chocolate brittle with cream ice cream and chopped hazelnuts is pure poetry at the end, a cuddle that stays in the heart and on the palate.
The selection of wines is excellent, in particular the Dogliani DOCG 2023 “Papà Celso” from the Azienda Agricola Abbona, which was able to accompany the meal with depth and character, telling the soul of the Langa in the glass.
The service was impeccable: fast, courteous and never intrusive, capable of making you feel welcomed without rushing. The kindness of Luca and Vittoria, as well as the refined company of Francesco and Valentina Rulfi, made the experience even brighter. A round of applause also for the cleanliness of the premises, with particular mention for the tidy and well-kept bathroom, a detail often overlooked, but here synonymous with attention and respect.
In short, Il Verso del Ghiottone is not just a restaurant: it is a place of the soul, where time slows down and each course tells a story. An unmissable stop for those seeking the true essence of gastronomic Piedmont, between beauty, taste and authenticity.
