I have always found their stall at the Central Market very beautiful and well-kept, so modern but at the same time traditional, but this also made me a little doubtful about the product offered, creating the prejudice that the new generations had given more importance to 'image than substance; yesterday I wanted to dispel any doubts, seeing among the sandwiches of the day the one with Tongue, and in addition to this I also took one with Lampredotto. While waiting for the preparation, you get lost among the offal and the many cuts available, as well as the various dishes offered to customers, each more inviting than the other. Once home I immediately wanted to try the Tongue sandwich, a cut that pushed me to try it, but I was shocked by the one with Lampredotto; I must have eaten about a hundred of them in my life but I had never found one so tasty without having a "strong" flavour, typical of offal, with such a soft consistency that I would almost define it as "creamy", so rich in fats which enhance the flavor even more. broth in which they are dissolved. Today I stopped by again to buy a tub of it, I was so curious to taste it again and understand its peculiarities; speaking with the boy at the counter, complimenting me on the products they offer, it was explained to me that in the city they are the ones who process the raw material and then resell it to many of the most famous tripe dealers, thus being able to select for themselves the freshest and most valuable. Truly a splendid discovery: good quality/price ratio, regarding quantity I must say that the portions are slightly lower than average; there are many offal and specialties linked to tradition that I am curious to try.
