On Easter Monday 2026, I made two very welcome discoveries. The first was the city of Altamura, which is absolutely fascinating and not just famous for its bread (which I don't even particularly like, and I'm referring to bread in general). The second was this trattoria.
After visiting the Cathedral and the Matronei (paid, 5 euros well spent), since it was late, but not yet past 1pm, we found ourselves outside without being able to re-enter the church and we happened to see an advertising panel for Trattoria Cenzino, either because of the name, which reminded me of what my mother called my maternal grandfather (Vincenzo) and maybe because something in the poster attracted me, or maybe it was the inspiration of the sacred place, but I wanted to go and see what it was about, after Saturday's dinner in Alberobello and Easter lunch in Bari, the traditional Easter Monday was planned with Casatiello and Pastiera, obviously strictly Neapolitan, but as much as I am a very traditionalist I am also a "comfortable" type and I have not appreciated eating outside without comforts much for years, in short if the place had inspired me even a little bit I would have eaten there, my wife asked me for reviews about "Cenzino", but I told her that the only one that What mattered was mine, of course, "De gustibus non disputandum est," so without a reservation, a few minutes before the 1:00 PM bell struck, I walked in and asked if there was room. Indeed, the place was completely empty, but had many reservations, and with an "Anglo-Saxon" opening time of 1:00 PM that was not to be waived. I might add, in keeping with the owner's personality, a delightful person but with a prickly personality, a "you either love him or you hate him" sort of thing. Since he's very much in tune with my way of being, I went with the former. However, they waived the offer for us and assigned us one of the few available tables a few minutes before 1:00 PM.
The place is welcoming, it has a certain exclusive feel—how can I explain it? Almost luxurious, but without being intimidating, and anyone who isn't used to it wouldn't even notice. However, without exaggerating, I can say it's very welcoming.
The food or the dishes, or if you prefer the courses, I don't feel like describing them, I photographed them and posted them, I think all of them, I was more than satisfied, I finally ate the lamb that was a must-try during the Easter period and that I was missing, and among other things I really appreciated the recipe, new to me, as for wine I was initially offered a "local" in bulk, a rarity in restaurants, where they always try to sell the labeled bottle thus tripling the profit, but I noticed not in Puglia, the good thing is that "these" gentlemen have at their disposal a formidable red table wine, speaking generally, a Primitivo around 14%, which is really not the case to refuse, in fact the day before in Bari there was only bottled wine, poorly stored and almost undrinkable, and nevertheless paid dearly, this one instead, I repeat, was excellent, the two of us drank a bottle plus an additional half liter, and without damage For my body, I had to drive over 300 km and had no problems, obviously I didn't get in the car right away.
I'll end with two promises: I have to return to Altamura to see it properly again. There was some annoying repaving work in the center, which maybe will be completed in August, and I'll visit the son of "Cenzino," the current restaurateur (please don't make him angry).
I forgot one thing: obviously, I read other people's reviews, not all of them, but some. I read that many complained that it was "very" expensive. We paid €67 for a complete, quality lunch, including water and "lots" of good wine. Sometimes in Naples, we pay more for pizza and an appetizer for two. I don't understand what people are complaining about.

In the historic center of Altamura, Cenzino is a typical inland Apulian trattoria, serving traditional, home-cooked dishes in a family atmosphere.
The atmosphere is intimate, clean, and comfortable.
The staff's welcome is warm yet discreet.
The menu boasts traditional dishes, but the most striking thing is the owner, who approaches you at the end of the meal, asks how you ate, and explains in detail how everything served is locally sourced.
The prices are absolutely in line with what's on offer, so you'll have to return as soon as possible.
