05/09/2025: It's been years since I've had such an excellent lampredotto sandwich or peposo. Lately, the "lampredottai" (lampredotto joints) I used to go to have lost some of their quality. Here, I found courteous, fast, and even friendly service, but above all, excellent quality ingredients. The sandwich bread is perfect and doesn't fall apart like it often does. It's also incredibly comfortable, with seating both inside and out.

21/07/2025: Lampredotto is an institution in Florence, and every Florentine has their favorite lampredotto maker: Lapo is mine.
When I met him, he amazed me by serving me cold Lambruschino with lampredotto, which I later discovered is fantastic in the summer because it "cuts the fat." But lampredotto isn't fatty; it's the leanest meat of the entire animal, and it was the only food I could eat after an operation that kept me on a strict diet for several months. In short: Lapo weaned me on lampredotto!
And lampredotto is just the most famous of Lapo's dishes, which he uses all the "poor" cuts, from sinew to breast, to tripe, which he also reworks "on the plate" like inzimino, cacciatora, artichokes, and everything delicious you can imagine with the "fifth quarter." Can you say that? Lapo is a high-end tripe maker who doesn't show off and delivers high quality. I don't want to make comparisons, since every Florentine has their favorite tripe shop...
