We went to this trattoria for lunch on Sunday as a couple and had a wonderful time. It was an experience we won't soon forget. The lunch was truly excellent, with quality food right from the start: the small complimentary oil tasting was very welcome. We had the Tuscia tasting for two as an appetizer, which was generous, followed by fettuccine with beef ragù and pappardelle with hare and juniper berries, both delicious (the pappardelle in particular were truly amazing). We would have also liked to try the rabbit Viterbo-style, but we were already full; despite this, the owner offered it to us because he wanted us to try it, a gesture that was truly appreciated. The desserts were also excellent. Special thanks to all the staff for their kindness, professionalism, and attention, especially with regard to managing my girlfriend's allergies: it's not a given. It's rare to find a restaurant with this kindness. So, congratulations. Very good value. We will definitely return when we're in the area again.

Spectacular restaurant! We had the tasting menu and it was fabulous. The pasta with venison, the rabbit, the wild boar—the flavor was amazing. You can really taste the work that goes into it. All in a very welcoming atmosphere and with service that matched the quality of the food. If we return, we will definitely go back. Congratulations!

We have been coming to Trattoria del Cimino for three years, and discovered it by pure chance. And are we glad we did! Samuele Calistri is the proprietor of his family run trattoria, and the family makes this restaurant so special, in the ambiance, in the food, and in the service. To sum it all up in one word: outstanding! The family’s traditional recipes are not only beautiful to see but also delicious to enjoy. Samuele provides his guests with a top-notch food experience, but he is also an award-winning sommelier who has a wine cellar that is the envy of anyone that knows and appreciates fine wine. He can recommend the perfect wine accompaniment to whatever dish one may select from the menu, and you will be astonished by the pairings that he can provide. We cannot recommend Trattoria del Cimino more! Grazie mille Samuele!

A truly wonderful discovery, this trattoria is definitely top-notch, both for its location with its arched ceilings painted like frescoes, and for its food, where excellent ingredients are cooked with traditional mastery. Everything we ate was completely satisfying, and we finished on a high note with a 99% hazelnut cake, accompanied by a warm zabaglione... Sublime 😍. And last but not least, the service was top-notch, with kindness and availability to our every request. We'll be back soon, highly recommended!

One of the best trattorias I've ever tried. Dishes are expertly prepared with local ingredients, in full keeping with the Slow Food philosophy. The wait staff is extremely kind, helpful, and professional. A must-visit in Caprarola.
