It's easy to write a review when you've eaten truly well and don't feel like you've wasted your money, even if the bill isn't typical of a trattoria.
Given that I probably ate my tastiest sliced steak in 40 years of traveling, I'd only make two minor observations, which should be taken as suggestions and not criticisms.
When serving a tasting plate of assorted cheeses, it's always a good idea to indicate where to start; it's not always easy for the diner to understand.
Since this is a family dinner on a Saturday night, there's no rush, and it's not a place with shifts, it's not a good idea to limit your appetizer intake because the first course is arriving and you'll eat it a little cold. No one's chasing us, but I can understand why some diners prefer the assembly line.
In any case, we'll be back soon, and very willingly.

Wandering on Easter Monday between Monzuno and Loiano, we found ourselves in Monghidoro... lunchtime now... what to do... we ended up at the Trattoria da Carlet, certainly without a reservation. It was immediately a no even though there were only 2 of us. Then they asked us if it was okay to wait until 1:15 pm (it was 12:40). A table for 2 would be available, so we accepted... we had a great time, excellent food and plenty of it, courtesy and kindness of all the staff. We didn't manage to try the desserts because they were too full... What can I say? Thanks, and we hope to return soon, perhaps by booking in advance!

"Penny wise and pound foolish"—so focused on controlling every tiny detail that they completely miss the fact that they're ruining the very thing they're trying to manage.
When an owner is that micromanaging, they usually create a "killer vibe" that no amount of nice decor can fix. It's a shame for those young waiters, too; they're likely doing their best while under a microscope.
It's the classic case of an owner who's lost in a glass of water: so focused on controlling every tiny detail that they don't realize they're ruining the very business they're trying to manage.
When an owner is that control freak, they create a heavy atmosphere that no decor, no matter how beautiful, can lift. It's also a real shame for those young waiters; they're probably doing their best while constantly feeling under the microscope.

We found it by chance during a motorcycle ride; they found us two seats even though it was fully booked.
The staff were extremely kind, helpful, friendly, and quick with service.
The atmosphere is welcoming, warm, well-decorated, and not too noisy.
The dishes are beautifully presented, and the quality of the meat is excellent. We ordered two slices of salt-baked beef fillet, and it was a wonderful discovery. The meat was exquisite, flavorful, and beautifully presented in a pan.
The desserts were also excellent.
Worth remembering as one of my favorite restaurants.

A historic trattoria in Monghidoro. I recently went there for the first time with a friend for dinner. Very centrally located, small and welcoming, with a rustic, spartan atmosphere. The owner seems gruff at first glance, but he's kind and welcoming, and the wait staff is friendly and helpful. The fillet steak with mustard and brandy was excellent. Generous portions, everything was delicious. I expected the prices to be a little lower, but now they're in line with Bologna trattorias. Definitely worth a try, highly recommended!

A place to recommend. The food is excellent: generous portions, with food from the Emilia-Romagna and Tuscan regions. The place is very comfortable; we'll be returning more often.

SPECTACULAR! The truffle fondue is atomic, the potato and truffle tortelloni are nuclear, and the sliced steak with mustard and brandy is to die for. Your taste buds will do a wave!! Gaetano's courtesy and expertise are priceless, and Raffaella and Arcadia's mastery is second to none.
