27/05/2025: We were there on Sunday evening in 4. We took 4 tasting menus and 1 bottle of Taurasi for €50. Total expense €350.
Everything was very satisfying, well presented dishes that combined in a balanced way some local ingredients with other more "foreign" ones. Kind and knowledgeable staff, a small slip on the description of the wine that however was not a problem. I do not live in the area but if I were to have the opportunity I would gladly return.
18/05/2025: A nice lawyer from Parma had told me about the La Valle restaurant, together we had shared the table at a Champagne-themed dinner last summer, alternating our impressions of the dishes and glasses that we gradually found in front of us with the sharing of our experiences in frequenting the places in the city and surrounding areas.
If, at least from the name, I could have imagined arriving in a place nestled between the first hills above Fidenza, I could not have made a bigger mistake. You go up, to enjoy a magnificent view of the Po Valley, open 180° before your eyes, the horizon limited only by that veil of evening mist of a day that was full of light.
Unfortunately I forgot to take some photos of the outside, the parking lot leads to a large veranda that embraces the entire building, in front of a beautiful lawn, several aperitif tables where you can linger for a few minutes before finally moving inside.
You are welcomed by a refined environment, the distances, the essential lines of the floor and walls, the spaces, the discreet lighting relax the senses, designed to enjoy a dinner without disturbing or being disturbed. The dining room staff have never lacked courtesy, above all attention and professionalism, the precise description of the preparations and above all the idea of each of our 5 courses, completely in the dark, left to the choice of the kitchen.
A journey from water to earth, from lightness to intensity, first freshness then the soft embrace of a new vision of the classics of the Emilian tradition, rightly a lot of space for stuffed pasta and broths, the choice to enhance if not exactly the km 0, at least the “right” km is essential.
Unquestionable raw materials, interpreted with imagination and precision, all very good dishes, but truly extraordinary the brioche bread with beef tongue and, for once, I feel like focusing on the dessert, not only the point of arrival but as has rarely happened to me the true protagonist, in the delightful friability of the Torta di Rose.
Among the pairings chosen for us, a plus for the Saint-Joseph Blanc “Vessettes” from Domaine de la Roche Paradis, varied and exotic, with a decidedly mineral matrix well underlined in the finish of the mouth.
If I ever meet the lawyer again, I will have to thank him… 🙂
