TheLab - Unconventional Burger Experience® In Milano

I've watched this "unconventional" place come to life ever since it was just Davide and Marco's idea. Years have passed, and many things have changed. But always, always, researching. I'm not talking about new scenes from posts with thousands of views, I'm talking about substance. I'm talking about ingredients, I'm talking about flavors and aromas. Nothing is left to chance. You should stop and listen to Davide speak, a raging river when it comes to cooking. You can hear it in his words, you can immediately tell even without being an expert (I'm a mechanic with a passion for good things) that Davide puts his heart and soul into what he does. Years ago, he explained to me that for his risotto (an ingredient in a sandwich dedicated to the city of Milan), he doesn't use powdered saffron, the kind you can buy in a bag at the supermarket, but rather the still-threaded kind, jealously guarded in a box, almost pampered and obviously rare, of the highest quality—and as we all know, good, special things are expensive. The meat is also refined because he leaves nothing to chance. Ingredients and combinations I never would have imagined. The open kitchen, nothing to hide, within sight. It's a pleasure to watch him work. The space is small, almost minimalist. Without ostentation, he doesn't try to overwhelm the customer with lights, mirrors, glasses, or cutlery that could mislead. He goes straight to the point, offering flavor, products, and experience. He doesn't show off his personal achievements, but he has nothing to envy of the Chef we keep seeing in every "sauce" on television. It's been a while since I've been able to taste one; I had to, I was forced (not by prison), but now I can't wait to sink my teeth into one of his burgers. And in my opinion, simply calling it a burger is an understatement. It's more of an experience.

The burgers were good, however, I was very disappointed with the service. Any change to a burger (removing a product) was a refusal and the obligation to make your own burger meant a price difference of €2.50 (while limiting the number of products added so as not to increase the bill too much). All this while there were only two of us in the restaurant, so there was no impact on the kitchen or anything else. Too bad.

We've been coming here since it opened, once or twice a year, and it's a guarantee for a truly unique burger. Expensive? Not when you weigh the quality and flavor. The place is tiny, but warm and pleasant in its layout. Try not to change; for us, it's a safe haven in a city that's changing so quickly, and not always for the better. See you soon.

Lunch with a friend on August 2nd in Milan, there's no one around, so I make a reservation outside. I have to say these are perhaps the best burgers I've ever eaten. The classics are excellent meat, with mixed salad, Branzi cheese, very good sauces, and crispy bacon. The fries are also excellent. My bill was €49 with two beers, which is a bit too much, even considering we're in the center of Milan. We'll definitely be back. I forgot, the staff was also very polite and helpful.

If you're craving a burger, this is the place to go. The ingredients are incredibly fresh and the combinations are well thought out. The place is small, but you can easily find a seat; the outside tables are very uncomfortable. The fries are a bit pricey.

Meat undoubtedly good ... I did not appreciate the fact that I could not change the ingredients of the sandwiches ... and the peppered and frozen chips !!! Having a simple menu (which I appreciate) I expected chips from fresh potatoes. Overall I ate well!

Das Restaurant serviert u. a. leckere Burger, sehr gute Pommes und spezielle Biere. Die Bedienung ist unglaublich freundlich - wir waren so begeistert, dass wir auf unserer kurzen Mailandreise gleich 2x dort essen waren. Absolute Empfehlung!
