Every time Pisa plays nearby, my friends and I certainly don't miss the opportunity to have lunch at the "Terme del Colesterolo", one of the most fun and enjoyable places I know where the art of cooking pork in more imaginative and tasty variations are the order of the day. Yesterday as an appetizer, cotechino pancakes and mashed potatoes with lard croutons. First course porchetta lasagne and then continue with ribs and belly cubes wrapped in bacon. All cooked at low temperature. A triumph of goodness.

Atmosphere like a fun tavern...pork has never been so enjoyable as in this place! From cotechino pancakes (divine) to lasagna with cotechino and mashed potatoes and rosettes with mortadella. Atmosfera da hard pork...il maiale non è mai stato cosi piacevole come in questo locale! Dalle frittelle di cotechino (divine) alle lasagne con cotechino e puré e le rosette con la mortadella. Da non perdere, la pancia avvolta nella pancetta. Un ringraziamento speciale al patron Cocco per la sua accoglienza speciale. Un saluto dai suoi nuovi amici marchigiani!

UNIQUE and SUBLIME, two terms, Wonderfully Fused!!!!!
Good thing we booked.
Rainy and sad April evening, the STAFF friendly, nice, of VERY HIGH quality, COCONUT and Fiò Characters of an overwhelming sympathy!
There were 7 of us, family and a 50 year old (an old lady but, don't tell her :D) to celebrate: we were welcomed in a unique and friendly way by all the young and very nice staff. ("Poor Seagull" and to be destroyed)
Let's move on to the food: DIVINE appetizers, you want to fill your hands and eat like the ancients, while the trickle of drool flows (hahahaha) based on fried sticks and excellent high quality cold cuts.
First courses based on truly sublime tortelloni, ricotta and porchetta and canelloni filled with pork, truly a specialty
Sandwiches with an EXCELLENT taste! Turmeric bread is a UNIQUE and special delicacy that gives an extraordinary lightness to the sandwich.
Even though we ate a LOT, we were NOT weighed down at all!
TOP ricotta cake and really excellent house Lambrusco.
In short, we had a really great time in this place in the center, where cleanliness, combined with the friendly and knowledgeable staff and truly noteworthy cuisine reign supreme.
Worth noting is the choreography of the venue, including the bathroom and the truly original, artistic and pleasant menu.
Price in line with the offer and for the quality given!!
Recommended for those who love places that are outside the lines but of high substance and authenticity!!
If I can advise it is better to book. Yesterday, on an anonymous and gloomy day (Thursday), it filled up quickly.
