17/03/2025: Milan is a city of well-packaged illusions, restaurants where aesthetics surpasses substance. Bottega Lucia is quite the opposite. Here the food doesn't try to impress: it just does.
The Poché Mountain Egg with Potato and Black Truffle Foam is a game of absolute precision: perfectly fluid yolk, airy foam, truffle that arrives like a whisper and leaves its mark. A dish that in less expert hands would be banal, here it is pure elegance.
The Amberjack Tartare with Crispy Vegetables and Robiola is a test of balance: impeccable cut, vegetables that break up the softness with calibrated freshness, robiola that binds without covering. It reminded me of the cleanliness of Nordic tartare, but with a warmer and Mediterranean soul.
The Ossobuco Gyoza with Saffron Cream are a surprise: thin pastry, perfect slow-cooked juicy filling, saffron cream that brightens every bite. A dish that moves between tradition and innovation with absolute naturalness.
The Escarole with Scamorza, Date and Hazelnut Butter plays with the contrast between bitter and sweet in a construction that recalls Arab cuisine, but performed with an entirely Italian sensitivity. Each ingredient has a function, no excess, just perfection.
And then the Beef Fillet with Rosemary Potatoes, the synthesis of the technique performed without smudging: impeccable crust, interior that preserves every drop of juice, golden potatoes on the outside and melting on the inside. A dish that doesn't ask for your respect, it demands it.
