I was a guest at a birthday party, I appreciated the use of unconventional products on the dishes which gave rise to absolutely new flavors at least for me. The owners were very kind and friendly.

You arrive at the Symposium, a bit by chance, reading some reviews here and there, but it turns out to be a truly positive experience. The owner Fabio is there attentive to give every indication on the food, products, cooking basics, but with whom you could also spend hours talking about anything, availability and courtesy of all the staff, well-made products.
House specialty tagliolini with Trombolotto, a native lemon that reigns supreme in every dish.
Definitely worth trying again.

absolutely worth trying if you pass through Sermoneta or the surrounding area, perhaps after a visit to the Garden of Ninfa!
incredible food quality, many of the raw materials are produced by them, in a mix capable of creating original flavors in traditional dishes.
the owners are very affable and friendly, if you have any curiosities they will explain each dish and their products in detail and there is also the possibility of purchasing them both on site and online.
fair prices. in the summer they also open the other location (the symposium garden) also in Sermoneta, which I can't wait to try.

Lots of talk... little substance.
Filled with chatter from the barker innkeeper, our expectations were high... unfortunately the dishes were rather disappointing, despite the additional sauces served at the time. First of all the fried artichokes, they were in oil and quite acidic. The first courses (tagliatelle with artichokes and mushrooms) were tasteless (17 euros per dish). We expected home cooking with fresh products, but in general it didn't seem like that to us. Secret recipes and delicacies, alas, were not reflected in the dishes.
The desserts didn't help, the cantucci seemed old and limp. The cannoli wasn't bad and the sour cherry grappa was good.
The selection of wines on offer, the friendly staff and the welcoming venue are certainly positive.

Ristorantino nel centro di Sermoneta. Personale super accogliente, con grande passione. Rapporto qualità/prezzo onesto. Tante opzioni gluten free con grande attenzione per i celiaci. Torneremo sicuramente!

Pranzare da Angela Concu e Fabio Stivali al ristorante "Simposio Gastronomia Storica Sermonetana", è sempre un'esperienza appagante. L'ambiente è accogliente, il personale è attento ed i proprietari sono sempre gentili, presenti e pronti a accompagnare i commensali nella degustazione dei piatti. Il loro prodotto di punta, da provare assolutamente, è il Trombolotto (condimento a base di olio, limone sermonetani e spezie profumate) ma anche le altre loro creazioni non sono da meno. Cito, solo per incuriosire, la bottarga all'armagnac, le visciole anch'esse all'armagnac, l'aceto balsamico ....
Il menù è semplice ma tutte le materie prime sono di ottima qualità.
I vini proposti provengono principalmente da cantine del territorio.
Il rapporto qualità/prezzo è più che buono.
Consiglio vivamente questo ristorante a tutti gli amanti della buona cucina.
