I'm returning to this place, even though I hadn't had a great experience in the past, perhaps because I'd had the Tori Paitan, chicken broth with pork, egg, seaweed, etc., but it wasn't as flavorful. I'd also had the karaage donburi, fried chicken on a bowl of rice and mayonnaise, which I liked better.
This time I'm having the karaage bites, but they were truly disappointing, and then the Shiro tonkotsu, pork ramen with egg, seaweed, etc., and compared to the ramen the first time, I liked this one better; it had a stronger, tastier flavor.
The place is small, seating less than 20 people, and it's hard to fit two people in because, in order to seat more people, they make you feel really cramped, with no room to move...
It's a place worth trying because it's a trend, but honestly, I was expecting something more...

This is the best ramen in Bologna. I highly recommend it: the dishes are full of flavor, the music is fantastic, the chef is a genius, and the food is delicious.

Very nice evening, typical Japanese atmosphere. Friendly waiters. Really delicious karaage. The dumplings were so-so. The ramen was really good. I'm giving it 4 stars only because it's quite expensive, but it's an experience I recommend trying.

Personally, it was a perfect experience: excellent food, a ramen bar atmosphere, and friendly and helpful staff. We even had a day without a line, so we didn't mind the wait to get in, but it would have been worth it!

The food is excellent and has an authentic flavor, comparable to high-end places in Tokyo.
The downsides definitely start with the service: snacks were served when we were barely halfway through our ramen, some drinks were never brought, and obviously the wait was long. Even worse is the atmosphere; not even in Tokyo do you eat in such a cramped space; all the chairs are packed together and don't allow for the slightest movement. It's a shame because the place deserves so much. I hope they change course and understand that service is just as important as serving a good dish.

Very small place, no reservations. The preparation and cooking of the dishes is open to the public. We had the ramen, which I'd say was excellent and a good size. The katsu curry with a very thick, spicy broth and fried pork was excellent, as was the Tokyo shoyu. The gyoza were good, although a bit dry and tough when the dough was pressed together. The kitchen and service staff were friendly and well-organized.

Good ramen, probably among the best in Bologna: the flavors are bold and reminiscent of Japanese ramen. The broth is perhaps a little too salty, but overall the experience is positive.
There are two aspects that I think need improvement. The first concerns the temperature in the dining room: it was cold, and several customers were eating with jackets on. I understand there may be technical issues, but it would be nice to find a solution to make the atmosphere more comfortable; the temperature was really low.
The second is a curiosity about the dish: why are half an egg served instead of a whole one?

For me, this is the best ramen in Bologna! I had the Tokyo Shoyu, and the flavors were intense and well-balanced. I didn't really like the cold green tea, though. The place doesn't take reservations, but you wait in line outside: you leave your name and phone number, and the waiter will give you an approximate time. There are about 20 seats on high stools, but the concept is: eat good ramen and leave room for those waiting outside.
I recommend it.
