31/10/2025: Last night, my wife and I made a last-minute decision to go out for pizza. After visiting several pizzerias—all fully booked—I remembered a place I'd known for years: the pizzeria "Le Vigne" in Piano di Tremestieri Etneo, right next to the little field where my children used to gather to play soccer years ago.
When we arrived, we were immediately struck by the welcoming atmosphere. The place is very well-kept, with the option of eating inside or outside. They welcomed us with great kindness, making us feel immediately at ease, almost as if we were at home. The staff—two women and a man—were always friendly, helpful, and smiling. We even had a personal chat with one of the waitresses about her family and children, which made the experience even more pleasant and personal.
The service was quick, attentive, and meticulously executed. But the real star was the pizza: countless variations on the menu, each more inviting than the last. We chose two—one with sausage and broccoli rabe, the other with confit tomatoes—and, as is our custom, we split them in half to enjoy both. The pizzas were large enough to pop off the plate, thin and incredibly light: beautiful to look at and even better to eat. They didn't leave us thirsty or feeling bloated or heavy.
Curious to learn more, I went to check out the oven. There I met Roman, the pizza chef: a friendly, polite, and enthusiastic Bangladeshi. While he worked, he explained to me—in a perfect mix of Italian and Sicilian!—that the pizza dough is "completely yeast-free." The dough is prepared with at least 72 hours of maturation, and once it's finished, they don't make any more: they prefer to close rather than lower the quality, unlike other pizzerias that replace the dough with "quicker" and heavier versions.
I also appreciated the dedication of the owner, who personally works in the kitchen. Exchanging a few words with her, I sensed the genuine love she puts into her work: an invisible yet essential ingredient.
In conclusion, I highly recommend Pizzeria "Le Vigne": if you're looking for a place to eat excellent pizza in a family-friendly, relaxed, and attentive atmosphere, all you need to do is make a reservation. I'm sure that, like us, you'll happily return... and recommend it to friends and family.
