Super-fresh fish and raw seafood you wouldn't expect in the countryside. A well-stocked wine cellar with fair markups. I fully confirm what's stated on their website: Ristorante Falco Pellegrino is a guarantee of quality, innovation, and atmosphere. We opted for a seafood menu and were impressed by the freshness of the ingredients and the bold yet perfectly balanced combinations.
The courses:
The experience began with creative and expert appetizers: the citrus-flavored anchovies and the contrast between the shrimp and passion fruit were spectacular. Honorable mention goes to the porcini-crusted burrata, an explosion of local flavors, and the tender red tuna burger. The salmon with fresh cheese and turnip was also very refined, along with the asparagus rolls and the perfectly cooked white sea bream fillet.
The highlight was the first course: a homemade pasta dish filled with monkfish, red shrimp, and sea asparagus, all tied together by a delicate yellow cherry tomato sauce. A truly memorable balance of seafood flavors.
Desserts:
To round things off, the desserts were a true delight. From the Toritto almond gelato (a local delicacy) to the revisited classics like the deconstructed cannoli and tiramisu, to a masterfully executed babà.
The Venue and Service:
The location is enchanting, with exposed stonework creating an intimate and classy atmosphere. The service was impeccable: professional, attentive, and discreet, exactly as described in their official presentation.

The food is very good; you can immediately tell the dishes are meticulously prepared and that quality ingredients are used. However, don't judge the price of the dishes; everyone decides how much value they place on their work. The only flaw, perhaps, is the service. A top-tier restaurant should also have waiters who can at least recommend a wine to complement your meal or who have a thorough knowledge of what's coming out of the kitchen. In any case, this is more than adequate.

Just when you think the food can not get any better in Puglia along comes this restaurant. Chef Natale is extraordinary and he pours his love into every dish, made by hand, all his vegetables grown in his land surrounding this beautiful establishment. The fish was so fresh and delicious. Every dish balanced and beautifully presented. Michelin needs to get over to Noci to hand this man and his restaurant a star (or two). The front of the restaurant is managed by Mirella who is warm and inviting and manages the dining experience with precision. Very worth a visit if you are coming to bella Puglia.
