Nei ristoranti di pesce solitamente si trovano le grigliate, i fritti, i primi coi crostacei, le impepate eccetera; abbastanza spesso buone. Poi c'è "l'altro pesce": quello che si gusta da ENSAMA, e che non ha nulla in comune con le grigliate, eccetera. Una selezione quasi maniacale della materia prima di freschezza assoluta, un insieme di pochi ingredienti per ogni portata con sapori sempre nuovi, la perfetta gestione delle temperature spesso diverse all'interno dello stesso piatto, il cui aspetto è simile a un quadro, il tutto servito con attenzione e discrezione. E poi una fila di portate tale da soddisfare qualunque appetito, con l'abbinamento di vini sempre corretto. E poi c'è Sabino che più che chef e sommelier è un celebrante della sua cucina. Forse è anche per questo che da tanti anni continuo a tornare.

We went to this restaurant, intrigued after reading the many positive reviews, which we confirm. A beautiful and delicious culinary experience, a real treat. Delicious dishes, with particular flavors and combinations, as well as beautiful to look at. Very fresh raw materials cooked with passion by Sabino, who proved to be an excellent host, present but not intrusive. There is no real menu as the dishes are prepared according to the fresh fish of the day. The bill was a little high, but it was repaid by the beautiful culinary experience.

Delicious food and really friendly staff. For lovers of raw fish it is a place not to be missed.

Nuova visita all'Ensama dello chef Sabino Triglione, padrone di casa gentile e grande conoscitore della materia prima che ama cucinare: il pesce. Locale che mi colpisce sempre per il colore chiaro degli arredi e la bellissima mise en place, bello il tocco di colore dei bicchieri e delle luci sui tavoli. Come si sa il menù non esiste, in base al pescato del giorno lo chef crea i suoi piatti, quello che chiede è sempre se ci gradisce anche il crudo. Piatti notevoli, basti pensare che nel menù che ci ha proposto abbiamo mangiato, in piatti diversi, tartufo, aragosta e caviale, oltre ad altre prelibatezze. Come mi capita per altri grandi ristoranti non sto ad elencare i piatti che abbiamo mangiato, perchè difficilmente potrei ricordarmeli tutti, soprattutto negli ingredienti, ma cerco di fare delle belle foto che rendano l'idea. Ritorniamo sempre più che volentieri all'Ensama, sia per i piatti che per la gentilezza e la competenza dello chef Sabino.
