The staff was extremely courteous, professional, and always present without ever being intrusive. The dishes speak for themselves: top-quality ingredients, meticulous preparation, and perfectly balanced flavors. The tartare with abundant truffles was simply spectacular, as was the fresh pasta, perfectly creamed and enhanced by a generously served, fragrant truffle. We were welcomed by the owner, Lorenzo, who seated us in the small dining room—seating a dozen—and explained the menu options in detail. We opted for the plant-based tasting menu with wine pairings. I kindly asked to replace the cheese course with finanziera, and my request was granted without a problem. In every course, we found great attention to local ingredients and local producers, with innovative ideas that respect Piedmontese tradition: a winning combination for the palate. The egg with shitake mushrooms and marinated egg yolk was noteworthy, as was the rack of cheeses accompanied by herbal teas, an original and well-executed combination. We were also thrilled with Lorenzo's wine pairings, which perfectly matched our tastes and made optimal choices to complement each course. We also appreciated the portions served per glass, which were larger than the average at other restaurants.
