I returned to this restaurant after a year. The atmosphere inside is intimate and welcoming, while the outdoor space is framed by the buildings of the historic center. Right from the start you are welcomed by the courteous and knowledgeable staff, ready to carefully explain the dishes. The selection of bread prepared by the chef is excellent and varied, particularly the tomato focaccia. The menu is well structured and reasoned, as are the dishes of the day. But what brings me back to Apollinare most of all are the hand-rolled tortelli with a tasty burrata filling emphasized by flakes of Moscato truffle and cherry tomato reduction. As a sweet conclusion, try the dark chocolate semifreddo with white chocolate cream and pink pepper. I therefore recommend this restaurant which is always a certainty and an obligatory stop for anyone passing through Spoleto.

On a sold-out evening in the city of Spoleto, we found very kind staff at the Appollinare who welcomed us even late in the evening in the second shift despite having many reservations.
Welcoming place and very kind staff, ready to handle all the requests we made, which also differed from the standard menu.
Excellent food, and served divinely, it was a pleasure to dine at this restaurant, highly recommended.

4.4/5 (5/5 food; 3/5 service; 5/5 atmosphere). Was attracted to this place thanks to the michelin guide. We came for dinner with my wife. Whilst it started off quite awkwardly, it did get better thanks to the food. We came in twice into the restaurant - first we thiught maybe it was closed, nobody was there, no staff or people. So we walked around came back and still no one there but it was already 8pm. We walked all the way in the kitchen, where we met the chef! Who then said someone body would meet us till finally staff came and mentioned that we should have gone through the other way...anway not a great start.
We opted to sit inside where aircon was on as it was super hot, and so did a few other guests later on. We ordered and absolutely the food was great. Good ingredients, including the amuse bouche. Each plate was certainly carefully thought through and presented, including the desert. The wine list was extensive and including a good variety. Although again service was awkward - i asked for the difference between 2 bottles (the years were very different) the waiter mentioned she would call the sommelier, who then came and blurted out just the 2 years. No explanation - just said the 2 years as if those were the only ones available. As we already had an awkward encounter i just picked one. I could hear then inside the kitchen, the waiter yelling at the sommelier saying that I wanted an explanation...anyway the wine was delicious.
Waiting time is extremely long. We came in at 8 and left at 11pm (2 appetizers 2 mains and 2 deserts), but prices were very fair
Atmosphere was good! The inside was well decorated, beautiful interiore and included an beautiful patio in case people wanted to stay outside. Despite awkward service we had a great night!

A very pleasant culinary experience
From the welcome appetizer, with a slightly revised version of the classic liver pâté, through to the different courses and closing with delicious self-produced desserts.
Typical local flavors but revised and adapted with atypical combinations for the area, delicate dishes with first-rate raw materials.
Special mention for the meat second courses, the pork loin cooked perfectly and wonderfully paired with a pear in Sagrantino and the rack of lamb, very tender.
The appetizers are particular and delicate (the grilled mushrooms are surprising), and the first courses with stuffed pasta are substantial and surprising.
Very courteous staff, present and never intrusive.
The external platform enjoys a pleasant breeze which made the evening pleasant in this scorching August.
I can't wait to go back and try new options.

We dined alfresco during the Spoleto Opera Festival and enjoyed a delicious lunch with great wine, attentive service all at favorable prices for a Michelin recommended property. I recommend the specials of the day and trusting the suggestions of the expert professionals who serve you. We did and enjoyed rabbit as well as other delicious courses. Would I dine here again? Yes. Would I recommend it to others? Yes.
