It delivers wonderful food and service in a historic building. It is a good balance between new and traditional Italian cuisine.

Magnificent location and a relaxed atmosphere, perhaps even too relaxed... We appreciated the tranquility of the place, but the wait for dessert was biblical. If the intent was to promote extreme slow food, they achieved their goal! ;-) Jokes aside, a little more attention to service timing would make the experience perfect! To be honest, the place was packed, making it difficult to keep track of everything. The dishes were extremely carefully crafted and unique, though it's a shame about the pre-packaged gluten-free sandwich. This is still high-end dining, so the price is affected, but it's absolutely in line with the quality and attention to detail. We'll definitely be back.

A truly wonderful experience! The food was excellent, the recipes beautifully combined, and the service was attentive and competent. The only drawback: it was a bit cold, and the air heating isn't adequate for such a prestigious restaurant.

Definitely one of the best restaurants in Spoleto.
The atmosphere is refined, the service impeccable, perhaps just a touch too formal. The cuisine offers updated Umbrian dishes, sometimes revisited with a confident and expert touch, with a vaguely French flavor. Such is the case with the lamb crepinette or the pigeon with foie gras. The egg, with creamed potato, truffle, and kataifi pasta, is delicious, as are the tagliatelle with black truffle. Simple and perfect.
The wine list is extensive and satisfying.
The bill is appropriate for the setting.

It's not the first time we come to this restaurant and as always it's an experience both for the attentive and careful service and for the exceptional dishes. The price is adequate for the place. Highly recommended.

Elegant restaurant in the center of Spoleto, dinner on Saturday, December 6, 2025. Excellent welcome, friendly and professional young staff, excellent table setting. We opted for the à la carte menu, with the addition of white truffle given the availability. It was a classic Michelin-starred restaurant entree with various types of platters. We started with a soft egg with Colfiorito potato fondue and white truffle, followed by tagliolini with white truffle, a second course of pork loin wrapped in lard accompanied by pears in Montefalco red wine and sautéed spinach, and finally a chocolate semifreddo ingot with white chocolate sauce.
All the courses were top-notch, compliments to the chef, and everything was accompanied by a bottle of champagne, while for dessert, a classic Sagrantino di Montefalco passito.
Excellent value for money, as was the wine list.
I recommend it.

During a visit to Spoleto, we were fortunate enough to visit Ristorante Apollinare. I won't deny that our expectations were high, and I won't deny that they were met. As soon as we entered, we were greeted—literally, like I hadn't been in a long time—by the very knowledgeable and courteous wait staff, who seated us and even helped us put away our outerwear. Let's get to the point, because the place we entered wasn't just a restaurant, but the starting point for a sensory journey. Rarely have I found a place where passion for cooking translates into such simple yet surprising dishes. The absolute highlight is the quality of the food, which to call "excellent" is an understatement. Each course is a celebration of the raw ingredients with sublime preparation. My favorite dish was the tagliatella al tartufo, a simple homemade tagliatella made with just egg yolks and creamed with salted butter and truffle (I hope I didn't miss a thing from Marco's presentation of the dish), a true feast for the taste buds. The service, as mentioned, was attentive yet discreet, with the wait staff explaining the dishes with genuine knowledge and pride. The elegant yet understated atmosphere creates the ideal setting to fully enjoy their creations. If you're looking for a culinary experience that will leave you with memories of authentic flavors, excellent ingredients, and a kitchen that dares to be bold yet respects tradition, APOLLINARE is the place to be. Featured in our favorite Michelin guide, L'Apollinare is an elegant restaurant housed in a former convent in the historic center of Spoleto.
It's intimate and cozy, the table lit by a small lamp; the dishes are excellent, solid, and enjoyable, without frills but never banal.
The service is attentive and courteous.
An excellent lunch.
A well-deserved Michelin mention.

The restaurant is beautifully decorated, with a warm and inviting atmosphere. The food? Simply amazing! Every dish is presented with such care—it’s a feast for the eyes as much as the palate. From the very first bite of the crusted cod to the last, it was nothing short of WOW. A truly memorable dining experience.
