A top-notch venue, both traditional and modern, with extremely kind and attentive staff and a friendly and knowledgeable chef. The only flaw with Michelin-starred restaurants is the wine prices, which are inadequate and overpriced. I would have paid more for dinner but definitely less for the wine. I don't like this business.

There's a place in Trani called Quintessenza that we Apulians should visit at least once in our lives. It speaks of our roots, of family strength, and of respect for nature. It was incredible to see how a mackerel, a notoriously underrated fish, or how a few arugula leaves thoughtfully placed on a plate, or even a sponge cake soaked in oil, can make one's soul reflect on who we are and how we should respect what nature offers us every day. The journey isn't just about food, but also about the soul, which the chef and his brothers bring out with every course of the tasting menu. If you're looking for an experience where your brain struggles to comprehend what's happening in your mouth, go there—you won't regret it. Thank you, thank you, and thank you again for the experience!

For those seeking an extraordinary culinary experience, Quintessenza is the place to be! I chose the Quintessenziale experience as a gift to my boyfriend for our anniversary, and I have to say, I couldn't have made a better choice. From the welcome, to the dishes, to the wine pairings, everything was sensational. Everything was delicious, but, in my opinion, the scampi with beans, chorizo, and kumquats were divine! Umami to boot! I loved the fact that each dish had a piece of fruit inside. Truly, thank you for allowing us to experience an evening that will forever remain in our hearts!

Located near the Sforza Castle, this restaurant boasts a refined atmosphere with meticulous attention to detail. The staff is very friendly. The dishes are excellently served and offer unusual flavors, confirming the prestige of the chef and the entire establishment.

We were greeted with great courtesy by the smiling maître d', who escorted us to an exquisitely appointed loggia with a picturesque view of the castle. The table setting, simple yet refined, immediately conveyed a sense of elegance and didn't go unnoticed. The tasting menu we chose proved to be a true journey through the flavors of Puglia: delicate, well-balanced dishes that evoked tradition with a contemporary twist. The attentive and punctual service accompanied the entire experience with discretion and professionalism. I particularly appreciated the chef's final greeting, to whom I had the opportunity to express my appreciation for an unforgettable dish: one of the best eggplants I've ever tasted. Easily 5 stars. Nothing to dislike, everything to love. The best meal we had in Puglia. The best service we had in Puglia. The best conversation we had in Puglia. If you're looking at the Michelin guide and debating where to dine while in Puglia, make sure Quintessenza is on your list. Candidly, we didn't have great luck with a couple of Michelin recommendations in other cities earlier in our trip. However, Quintessenza helped us end our trip on a high note. We did the Classici tasting menu, and not one bite disappointed. Think of it this way, if you want to experience the classic flavors of Puglia using the highest quality ingredients in an accessible atmosphere presented through a fine dining lens via a highly skilled modern interpretation backed by knowledgeable and supremely friendly service, then Quintessenza is an easy choice for you. Here's your dilemma though. If you eat here early in your trip, nothing else may compare, and if you eat here late in your trip, you'll likely forget all the other places you ate.

First experience at a Michelin-starred restaurant, fantastic. The service lasted at least a quarter of the dinner, and the waiters were impeccable and very approachable. We tried the seven-course "Quintessenziale" tasting menu with wine pairings, which I highly recommend. It was like a journey through Italy and France, tailor-made for their menu; every glass perfectly complemented the dish. The sophisticated dishes, with diverse influences, still convey a homely feel. The location also leaves no one disappointed; the interior is incredibly distinctive, with stone walls and ceilings and large windows overlooking Trani Castle. In the summer, I recommend booking on the terrace, where you can also enjoy a view of the sea and the cathedral. An experience I would definitely repeat.
