Sicuramente il ristorante lavora molto in quanto si trova all'interno di un resort che lavora molto bene. Nel complesso però devo dire che l'esperienza culinaria non ci ha soddisfatto del tutto. Antipasto: sformato di zucca, patate e cipolla con patate completamente crude. Risoni come primo anch'essi indietro di cottura. Agnello molto buono così come anche da sottolineare un'ottima carta dei vini (favorita dalla condivisione con il ristorante stellato adiacente).

La Tartare di manzo "Etrusco" con variazione di radici, capperi e olive taggiasche è un vero spettacolo, così come la selezione di salumi IGP. I primi piatti, come i cappellacci di pasta all'uovo ripieni di prosciutto crudo di Norcia su fonduta di parmigiano bio e la vellutata di cicerchia, sono semplicemente squisiti. I secondi piatti, come l'agnello IGP panato con erbe aromatiche e il Suino Cintino nero cotto a bassa temperatura e glassato al miele, sono un'esplosione di sapori. Il tutto accompagnato da un eccellente Montefalco Rosso delle cantine Pardi, che completa perfettamente ogni portata. E per finire in bellezza, i dolci, come il Babà con Rhum crema e amarene e il Cannolo con Pistacchi di Bronte, yogurt e frutti di bosco, sono stati semplicemente strepitosi. A nostro avviso il ristorante Quattro Sensi di Borgobrufa è un luogo dove il benessere, la natura e la cucina si fondono in un'esperienza gastronomica straordinaria. The cuisine is the real strong point of this restaurant, with aesthetically fascinating dishes and extraordinary flavours. The high-quality ingredients sourced from the nearby Umbrian countryside truly capture the essence of the region. The "Etruscan" beef tartare with variations of roots, capers and Taggiasca olives is a real spectacle, as is the selection of PGI cured meats. The first courses, such as the cappellacci of egg pasta filled with raw Norcia ham on organic parmesan fondue and the pea cream soup, are simply exquisite. The second courses, such as the PGI lamb breaded with aromatic herbs and the black Cintino pig cooked at low temperature and glazed with honey, are an explosion of flavours. All accompanied by an excellent Montefalco Rosso from the Pardi cellars, which perfectly completes each course. And to finish on a high note, the desserts, such as the Babà with rum cream and black cherries and the Cannolo with Bronte pistachios, yogurt and berries, were simply sensational.
