The dishes are truly excellent. The balance is perfect and all the ingredients inside make the bite complete and tasty. For example, the "Veal cheek cooked at low temperature on Robuchon-style potato puree and marinated purple cabbage" surprised me. If taken individually the cheek might have seemed slightly bland, but if eaten all in one bite with the potatoes and purple cabbage the flavor was complete and had no defects, demonstrating the fact that there is a study and a precise idea of ​​the dish that you want to bring to the table. Excellent dishes with splendid reinterpretations by the chef who finds the right balance between presentation, aromas/flavors and quantity. The desserts are also superb. Never cloying but delicate and rounded. They are a journey more than a dessert. The wine list is also not bad. The service is of a high standard while maintaining a family approach.
