Not much to add regarding food, this is really a beautiful experience. The insalata 51 is absolutely necessary (and NOT to be split!) -- it's a journey in itself. We also added the beef tartare with black truffle shavings; skip this, I didn't think it was worth the 50€ (and not as clearly about the truffle compared to other dishes we've had elsewhere). As with any tasting, there were standouts and less mindblowing dishes in the "seasonal things" menu, but Enrico Crippa's vision comes through clearly in all of them, representing the pinnacle of representing each flavor and ingredient (especially vegetables from the garden!). It's expensive and one has to go in knowing that this kind of meal is an expression of the chef's philosophy, not just a way to satisfyingly fill your stomach.
On the service side, really wonderful and attentive from all -- the (young!) sommelier even provided a sort of faux pairing of a handful of very nice and local wines, which added about 120€ to the check (very reasonable compared to the "grand tasting"). My wife also appreciated the nonalcoholic options (a really delicious and surprisingly subtle kombucha as well as a "hyperlow" gin and tonic). The only minor note regarding service is that breadcrumbs were only swept once (rather late as well) and the water pouring was aggressive (splashes on to the table). Things that don't matter anywhere except a three-star restaurant!
Pacing of the food -- perhaps a little on the slow side (our meal lasted about 4 hours), but at the very least our hosts visited in between quite naturally, somewhat alleviating the lull between dishes.
The room we were in (three tables upstairs) felt a little sterile despite some wonderful tapestries by an American-Ukrainian artist. No music here, which was certainly a little awkward at first, but as the meals started and the choreography of the service time kicked in, the feeling dissipated. Just enjoy the food and talk to the team!
We appreciated very much the opportunity to meet the chef and take a photo, and also a surprise gift (subtly presented without fanfare at the end, we think for our special occasion). Our total was about 1000€, in fact lower than I expected since I let the sommelier choose the wines. Worth it if you find these kinds of experiences meaningful in the same way other hobbyists do. Perhaps not for the first-timer.

What can you say about a 3*** Michelin starred restaurant, chef Crippa. Everything was perfect, even the birthday lunch, completely vegan, prepared for my nephew. Compliments.

An experience different from the others, thank you for making me appreciate a different Piedmontese cuisine and discover how the wise use of herbs/vegetables/flowers can make many dishes unique.
For my wife, who doesn't eat meat and cheese, it wasn't simple on paper... in Piedmont, which is one of its homelands, in addition to truffles, like me, she really appreciated the dishes offered on the menu.
The service was excellent, although the menu was perhaps a little too long given the many starters provided. Excellent wine list.

Not much to say, fantastic experience. At these levels we cannot talk about food but about a sensorial experience that transcends the concept of dinner. Then you may like everything or some dishes may not suit your tastes, but here we are talking about something that goes beyond that. I thank the head waiter and chef Crippa for his availability and the visit to the kitchens

Sono stato al Duomo per la seconda volta, la prima era per onorare una scommessa persa,purtroppo, con l’amico Matteo.
Abbiamo optato per un menù ridotto,4 portate invece delle canoniche 8-11 di un menu normale.
Devo dire che le innumerevoli amuse bouche che vengono offerte valgono praticamente un pasto.
L’insieme del tutto può solo definirsi un tripudio per il gusto e la vista anche se chiaramente non tutti i piatti danno le stesse soddisfazioni.
Chiaramente, parlando di un 3 stelle non si può pensare che sia economico, personalmente però penso che ne valga la pena.
Unica critica: è un peccato che il menù “ridotto” ci sia solo a pranzo nei giorni feriali; non tutti possono sopportare un menù di 8/11 portate.

Pranzo al ristorante tristellato piazza duomo di Alba, si entra da un vicolo della piazza e si sale in un locale al primo piano; abbiamo pranzato nella sala rosa che francamente non mi è piaciuta molto. Preso il menu discover da 170 euro disponibile solo a pranzo di 4 portate. Piatti eseguiti e impiattati alla perfezione, in particolare molto buono l’antipasto merluzzo e zafferano elegante e delicato e a seguire i ravioli alla nduja molto saporiti ancorché in quantità molto limitata. Nella media il secondo costolette di agnello con taccole, deludente il dessert tipico piemontese il bonet servito su un piatto senza nessun accompagnamento a parte un te aromatizzato da bere insieme, si poteva sicuramente fare di meglio. Prima del pranzo tantissimi piccoli assaggi alcuni buoni altri meno ma comunque graditi e la piccola pasticceria con il caffè. Carta vini esageratamente costosa abbiamo preso due calici a 36 euro ciascuno ed era il meno caro, francamente fuori mercato. Servizio cortese e veloce, gradito il menu regalato a fine pasto anche se il costo totale con acqua caffè e vino è decisamente alto in rapporto a quanto consumato. Mi aspettavo di più…

PRO'S: Piazza Duomo is an elegantly decadent multi hour dining experience. We split the 100+ ingredient garden salad, had cod with saffron, pink risotto with prawns, Plin with veal & the center cut lamb with camomile. Dessert was a decadent selection of chocolate, hazelnuts and more.
CON'S: None for food & service. Difficult for handicap people.
SUMMARY: Piazza Duomo is the answer for anyone in search of the finest dining experience.
