08/07/2025: Don't ask yourself when you arrive: 'Ah, but am I in the right place?' because if you followed the directions you can't have made a mistake. Don't show impatience if the restaurant doesn't appear once you reach the parking lot, because it's there at the end of the driveway. Don't complain if horses welcome you when you arrive because the name of the restaurant says 'equines' and nothing else could have awaited you.
Trust me, put aside the prejudice of those who have already formed an idea and expect it to be confirmed because this place is different, it's new, it's unique, it makes itself sought after and desired and only those who enter free from what they have already seen elsewhere can enjoy what will be offered to them.
The atmosphere is Virgilian bucolic. With little effort you could see Titiro lying in the shade of the fagus and hear the sound of his flute, while the sun invigorates at every other hour, the greens that it illuminates. Tityrus may have also adorned his hair with a crown of buttercups that grow abundantly in that place. Iron-shod clogs give audible syncopated chimes approaching and receding, dilating time instead of counting it.
However, other senses besides sight will soon be stimulated because this is why you came. You came for smell and taste, to satisfy them first and make everything else a corollary in the true sense, the frame of an experience.
I will not talk about the menu because it is random. It changes frequently, giving clear signs of a dynamic, active brigade, looking for stimuli. I will talk about what you will find with any tasting of any choice of any munu of the Betulla: passion and attention, but also wisdom in the choice and care of the material, ability in the combinations, taste in the plating. You will find the world in its culinary manifestations, from the tradition of Lombard cuisine, to the freshness of Mediterranean cuisine, to the warmth of Berber cuisine, to the ardour of Mexican cuisine, to the smokiness of North American BBQ, as well as very sophisticated dishes.
Don't expect all this every day. The menu is always limited because the preparation of each dish must be accurate and precise.
You will find a careful and varied cellar with wines that always go well with the dish and dishes that willingly accompany wines.
The dining room staff is friendly, always listening, flexible enough, at home when requested, very professional for the purpose.
