It had already been selected during my research for a dessert born in this pastry shop run by the grandfather Carlo of the current owner, granddaughter of the founder Carlo, the black and white dessert, a variant of the French profiteroles (The black and white is a typical variant from Messina (often called "bongo" in Tuscany) which includes cream puffs filled only with whipped cream, covered with gianduia cream and chocolate flakes. The profitterol is a dessert of Italian-French origin consisting of cream puffs filled with custard or chantilly cream and covered with a drizzle of dark chocolate.

We had the pleasure of trying real black and white for the first time, in this pastry shop where it was born!
Truly delicious!
It's impossible to imagine anything more balanced: just the right amount of sweetness, not at all cloying or heavy. The cream puffs and creams are incredibly light.
And, what's more, they're made to order!
The lady was very friendly and kind, making the short wait for our order a lot easier.
