This restaurant is a guarantee of authentic, authentic Apulian cuisine. Peppino tells stories about his cuisine that perfectly describe and convey what you're eating.
There's only one flaw: the addiction to this cuisine 🤣, and even traveling a few extra kilometers is worth it. In my case, from Brescia 🤷🏻♂️
A must-try.

Peppino, the host, is a true character, truly passionate about his work and the history of food. His explanations are appreciated, just like his cuisine, which is made to order! There's a bit of a wait, but it's worth it!

A casual discovery of this restaurant via The Fork.
The place is intimate, well-maintained, perhaps a little "old" (for my taste), but the service and food are top-notch.
Fortunately, that evening (in July) the only guests were my wife and I, so the owner was able to devote himself entirely to us, guiding us through the tastings of the dishes and drinks.
He calmly and passionately explains the origins of the various ingredients, the dishes, their Latin names, and his own interpretations;
he recommends which oil (and even which type of bread!) to use to enhance their properties.
His Apulian origins influence these accounts, in the sense that many of the dishes and drinks (according to him) originated in his homeland...
but this is a minor sin, readily forgiven for the enthusiasm with which he entertains his guests.
In short: a truly delicious dinner, superbly explained.
The dishes were exquisite, especially the first courses.
Just thinking about the orecchiette nere I enjoyed makes my mouth water!
Top marks, we'll be back.
