We had an outstanding meal with excellent, friendly service. We were nearly put off by the previous negative reviews but could not disagree with them more. We ordered a pasta course and dessert but in addition to this, the restaurant supplies excellent amuse bouche beforehand, palate cleanser between courses and chocolates after the desert. Given this, it is entirely reasonable to require purchase of two courses.

Renowned restaurant in the center of Palermo. The place is delightful, next to Palazzo Valguarnera where the famous ball scene in the film The Leopard was filmed. Even the small square in front gives a sense of peace and lived history.
The menu, either at a fixed price, both land and sea, or à la carte, offers Sicilian dishes with a contemporary twist.
In my opinion, the chef's technique is impeccable, the dishes are balanced between the various ingredients of the highest quality and the balance of flavours, never too overwhelming one over the other, impeccable.
Why three stars. The service, although kind, was not convincing, times were not studied, they brought four breadsticks for two people - very good - and only much later the bread. The appetizer, very good, also arrived too long. With the paccheri a Chardonnay was suggested to me which, although discreet, in my opinion did not support the robust flavor of the broccoli and burrata present in the dish. Furthermore, it was served to me without letting me taste it first and without waiting for my consent. So, if I wanted to change it or it wasn't to my liking, I still would have had to keep it.
Finally, I must admit that the prices are not justified by a restaurant which, although interesting, has worthy and certainly superior competitors in the area, where you can find equally interesting proposals but at decidedly more affordable prices.
In other words, this place is really very far from being able to aspire to any star.

After six years he's right, it doesn't make much sense to answer me. On the other hand, I'm sorry that it was a superficial reading. The question of the star is posed at the end. Even if I hadn't talked about it, the sense of unjustified prices and valid alternatives at more affordable prices in Palermo doesn't change. You see, it makes little sense to respond to a criticism with a further criticism of the criticism. Communication has its rules, like in the kitchen. You accept that you were not, then, up to the prices you imposed. I repeat, there was better. With or without stars and despite the many positive points already highlighted. Quite a strange experience at a Michelin restaurant. The food was okay but not bellissimo. Most of the dishes felt unbalanced to my taste. For example, the waffles with ricotta were overly rich, with a lot of heavy ricotta and just small pieces of waffle.
Additionally, the staff was so intrusive that we barely had a chance to talk with our friends.
Not the place what I visit one more time.

The place is top and the service is excellent, top wines, education and refinement, there's no denying it.
I would say that it is not very suitable for simply eating due to the very limited servings and the slowness between one course and the next.
But yes, we bourgeois Palermo people are used to something else... :-)
It's obvious that it's not the venue's fault, but the type itself.
You should go only for the pleasure of tasting it, not to gorge yourself.
I repeat, I was aware of it and the mistake was going with the children, who we then had to have again for dinner in other places nearby.
Ultimately top for tasting, then if you're hungry you get up and go get a nice arancina or a sandwich with spleen in some street food nearby :-)
If I go back without children in tow who are happier eating a pizza and don't yet have a mature palate for certain foods

I’ll admit…I was super hesitant because of the recent reviews. I’ll be happy to admit I didn’t see even one bit of the negative experiences as those reviewing previously did. Maybe the restaurant stepped up their game?? Overall, in my honest opinion this is definitely worth the price point.
The food was phenomenal. The service was exceptional. I am full. We chose the wine paring and that made a difference for the meals and I’d highly recommend it.
I booked dinner for a friend’s birthday and started to read the reviews the day of and quickly became hesitant. I figured it’s already booked so I might as well try it. I’m so glad I didn’t cancel my booking and I’ll happily come back here again!!

Disappointed.
It's good, but not at all consistent with what the website and the prices (310 euros for 2) led us to think:
* the location: we expected to dine inside the Palazzo Gangi, and in fact it is either a small, ordinary room inside, or on the terrace on the Piazza Croce Dei Vespri square
* cuisine: good but not sophisticated enough, very uneven depending on the dishes, there is still a lot of distance compared to the cuisine of a Michelin star...
* service: here too, friendly, pleasant, but uneven; the sommelier has very good communication and talks about her bottles with passion; others in the team do the job coldly or clumsily
In summary, this would be a restaurant to recommend if the prices were halved, or the quality and service were much higher.
