14/12/2025: I'm delighted to write a review of this restaurant. I'd like to point out that I'm a university professor and a fairly well-known doctor in the capital. I've also written two cookbooks (Antonio Puccetti: Ricette di vita 1 and 2), which have also been very successful.
When you write about the King of Carbonara, you obviously run the risk of attracting criticism. In reality, there's no such thing as the best carbonara in Rome, because personal taste, cultural background, local customs, and habits all come into play in judgment. In my opinion, there's a specific concept of cuisine that lies behind the dishes prepared, the value placed on the cooking process, and the significance of crafting a dish.
Let's just say that this restaurant and its chef perfectly embody my concept of cuisine, which isn't just the mere execution of dishes in which ingredients are balanced to create a pleasing and enjoyable result for diners. Here, behind the dishes and in long conversations with the chef, I found everything I consider true cuisine made with love and passion, with respect for the ingredients, their authenticity, and their local origins, and with a view to food above all as a cultural event that gives continuity to ancient regional traditions and transmits the values and flavors of traditional regional cuisine to new generations.
I remember that Italian cuisine is the only cuisine in the world designated a World Heritage Site.
That said, the carbonara, for me, is truly the best I've ever tasted (and I've tasted many): just the right balance between crispiness and creaminess, a measured use of pepper, the fried calamari and shrimp is amazing, perfect... the wine biscuits are unique and absolutely fantastic...
So, top-notch cuisine. The staff is made up of young people of various ethnicities, demonstrating that the cuisine can enable and foster the integration process so many talk about.
My heartfelt congratulations! A top-notch place where attention is paid to what you eat, not to decorative frills and ornate dishes that, frankly, are a waste of time.
This is obviously my humble opinion, although I honestly believe I have some expertise in judging a restaurant...
