I had the pleasure of tasting a splendid tagliata, labeled on the menu as:
"The Butcher's Cut," flavorful and tender, accompanied by a homemade chimichurri sauce with parsley and Modena balsamic vinegar.
The most tender and flavorful tagliata you could ask for.
If you read the description of the cut, which I've attached, you'll understand its value...
Lombatello (or Diaphragm): This is the "butcher's cut" par excellence. It's a muscle that separates the thorax from the abdomen. It's very flavorful, tender when cooked quickly, but rare (only a few ounces per animal are obtained).
Butchers tended to keep it for themselves because it's a unique piece per animal, difficult to display but incredibly flavorful and tender.

A restaurant that breaks the mold. Here you'll find everything you could want, with a touch of passion; from the waiters to the chefs.
Let's start with the order:
Clean and welcoming atmosphere.
Smiling, eager-to-please staff.
The chef/kitchen, or the owners, not only have a smile, but also the mischievous desire to overwhelm everyone at the table with flavors and aromas.
The menu is explained with impeccable clarity, the dishes speak for themselves; the portions are excellent, and the recommended pairings are top-notch.
You enter the private dining room, and within a minute (maybe) you feel at home, enjoying fabulous dishes and wines.
Go there, we recommend it.
Their smile alone is enough to tell you, "WE'RE IN THE RIGHT PLACE."
P.S.: After dinner, enjoy one of their cocktails.

Excellent dinner, from appetizer to dessert... Warm and welcoming service, super melt-in-the-mouth meat... Highly recommended the zabaglione.

We found this place by chance, but it was a pleasant surprise! The menu is short, but high-quality and constantly changing. The place is cozy and intimate, and the guy who runs it is truly kind and warm. We'll definitely return in the evening for a more extensive menu and live music.

Back after some time... I shouldn't have waited so long... what can I say... INFUSION... If perfection were possible, this would be it. The kindness and expertise of these young men (Marcello is the best!), who continue to improve, reaching ever-excellent levels. This time, in addition to the magical tartare I'd already had the first time and couldn't live without, I opted for the lamb. I was warned that instead of the sauce listed on the menu, there would be a variation. I think such a unique flavor, umami, sweet, savory, I couldn't even describe the flavors, but what I do know is that I've never tasted anything so unique and good.
And for the record... I'm returning on Saturday. They're becoming addictive 🤭
Just stepping inside makes you feel like a queen! The guy whose name I can't remember welcomed us, opening the door like no one ever does. A big smile and that kindness that makes you feel at home. Extremely knowledgeable and kind in explaining the dishes. They weren't there last night, but we were already prepared for a carnivorous evening, so we didn't miss them too much. Knife-cut tart with various fruit and vegetable salads for me, and potato tart with cheese fondue and sautéed mushrooms. Followed by picanha and sliced horse meat. We couldn't help but be tempted by the desserts... the apple tart, which you'll be lifted by a cloud of vanilla and lemon ice cream. The price was fair for the quality and attention to detail. The service was worth the whole dinner.
I asked to take home the steak trimmings I'd left for my dog, and I can't tell you how much care they took with the little bag they prepared for me. Truly lovely.
