We dined at La Panacea after reading the excellent reviews online, and we can say that our expectations were fully met, indeed exceeded.
The welcome was warm and the atmosphere very pleasant, familiar, and authentic. Special thanks to Gabriele, who looked after us throughout the evening with great professionalism, expertise, and courtesy, providing excellent advice on both the dishes and the wine.
The meat was truly excellent, perfectly cooked and of superior quality. The trio of tartares was not to be missed, carefully prepared and rich in flavor. The recommended Syrah was also excellent, pairing perfectly with the dinner.
A place where you immediately feel at home, with quality products and attentive staff. If you're in the Pisa area, it's definitely worth a visit. We'll definitely be back!
Finally, I'd like to add that restaurants like this need no reviews or introductions; they're already excellent in their own right.

This place was recommended to us, so I read the website and it was clear that behind this simple man there is great preparation and years of study. Being a big carnivore, my mouth was already watering... what can I say, let's start with the hospitality of the owner who served us, friendly and very easy-going, he immediately understood both what I was looking for in terms of steak and wine, but let's talk about the quality, this place is perfect for those who want to eat real steak, a very sweet and succulent butter, I have never eaten such an excellent steak, I took the liberty of asking the owner if by chance they were not planning on opening a place near me, the extra gem was that homemade bread, I asked for it three times... Worse than a drug, especially since I asked him for the recipe... It's a real shame that this place is so far from me... Here 5 stars are not enough, but it is truly excellent.

⭐⭐⭐⭐⭐ An unforgettable experience — far beyond a meal.
From the moment we sat down, the service was exceptional. Our waiter took the time to explain every dish with patience and enthusiasm, and his recommendations were spot on. This is clearly a place run by people who are passionate about what they do.
Almost everything is made in-house — the charcuterie on the antipasti, the bread, the pasta, the desserts. You can taste the difference. The meat was outstanding: perfectly aged, expertly cooked, and the owner's knowledge of each cut is impressive.
The atmosphere is wonderfully local and family-like. No pretension, just genuine warmth. The owner himself came to our table several times throughout the evening to check in, share stories, and make sure we were happy — that personal touch made all the difference.
But the real cherry on top? After dinner, with 7 km back to Pisa and five of us unable to find a single taxi, we were stranded as the last guests of the night. Without hesitation, the owner offered to drive us all back to our accommodation — in his vintage car. It was one of those magical, unexpected moments that turns a great dinner into a truly memorable story.
If you're anywhere near Pisa, make the trip. La Panacea is the real deal.

We came here for dinner, drawn by the excellent reviews, and I must say we were not disappointed! The pappa al pomodoro was truly delicious. Then, the homemade pappardelle with Chianina beef ragù, excellent! Of course, with homemade bread to mop up the sauce. But the real highlight is the meat: a wide variety of steaks and expert advice. Cooked perfectly! Friendly and professional service! If you're passing through, a stop is a must!

This is my second visit, and it's become a regular stop every time I come to Pisa. The welcome is very warm and the staff are incredibly friendly and helpful. The products are of the highest quality, many of which are locally sourced, like their bread and its turmeric variant, the melt-in-the-mouth cured meats, and all the side dishes. The meat is of the highest quality, allowing you to experience tastes and flavors from every corner of the globe. Of course, the wine, desserts, and liqueurs are also available, so much so that further comment would be superfluous. What can I say? It's a place where I felt at home even though I'm hundreds of kilometers away. The owner is a wonderful person, both for his culinary knowledge and his empathy and kindness, which in my case culminated in a gift from him: his first apron.
I'll return whenever I can and recommend it to everyone.
