19/03/2024: I could summarize this review in just one consideration: among all the restaurants I have had the opportunity to visit in the world, for the first time I have not had the opportunity to make a single criticism on a single dish that did not meet my taste.
The chef, Domenico Marotta, does what every chef should do: use recognizable ingredients, enhance them and present a tasty dish without wanting to amaze at all costs, forgetting what good cuisine is, which as the name suggests, must be good , first of all, before even appearing, fully succeeding.
His dishes have traveled between starred cuisines, even reaching Asia (the references to Japanese cuisine are evident), and then returning to where it all began, home: the flavor of memories (some gems cannot be found elsewhere), transformed into gourmet keys it is, in my opinion, the element that distinguishes it and the best cuisine possible. An exhilarating experience.
The dining room staff is no exception, with an attention to certain details that I have rarely encountered in other restaurants.
The wine list is extensive and curated, and the sommelier Anna is attentive and punctual in suggesting the perfect pairing.
I rarely spend time on such detailed reviews, but this is one of those cases where it's really worth it.
