They have the best [not traditional Tuscan] bread and they serve it with the best balsamic vinegar we've had in any restaurant ANYWHERE.
We've never had a dish we didn't like.

Update one year later: we still come often, but I admit that we often order our same favorite items. Last night changed our future behavior. We were in a mood for something different. We still ordered our standard pasta dish: Pici with Tuscan beef ragu, but then we branched out into the unknown.
We started with a baked eggplant with tomato sauce and mozzarella cheese. It was life changing. This 5 euro appetizer was the best vegetable dish either of us have ever tasted. I Will try my best to recreate it, and our host was open about some of the critical secrets.
We followed with slow roasted pork neck in a wonderful sauce with mashed potatoes and fennel. Every bit as good as the eggplant, but not so unique.

When we manage to spend a few days relaxing in Sarteano, the Taverna di Merlino has become the obligatory stop for dinner. The dishes are all delicious, everything homemade, including bread (a real delicacy). The kindness and professionalism of the owners are the icing on the cake.
Well done guys, the five stars are well deserved.

Awesome croutons with caramelized onions and pork, nicely done steak, and a lovely waitress who speaks any language you want. Sadly the desserts were not quite to my taste, it could be almost perfect place.

Excellent experience from all points of view. Very welcoming environment with not very large rooms and an intimate and rustic atmosphere. Excellent service and helpful waitresses; it was also possible to have appetizers and first courses arrive on the table at the same time as the first course. The change of cutlery was timely and specific knives for meat were available. The cheese starter and the lard crostini starter were excellent. As a first course we had some very delicate tagliatelle with white ragù and some very tasty pici with truffle and sausage. For the second course, the chicken was a little dry but excellently spiced. The highlight of the dinner was a beef stew as soft as butter accompanied by wine and raspberry cooking sauce and mashed potatoes, nothing short of amazing. Dinner ended with a good but not special caprese cake.

Recommended to go! Make sure to make a reservation because they fill up quickly. A treasure of a staff. Food is very tasty. Been twice in 8 days. Super fun as a couple but also with several people.
