A friend recommended this place for my visit to Milan and I was very pleasantly impressed by the presentation and preparation of the Fassona tartare and the Pluma Iberica. Despite not having made a reservation, the hostess ensured that I got a nice table. The server was friendly, knowledgeable and made sure that the order aligned with my wishes. I will definitely visit La Griglia di Varrone when I’m back in Milan again!

Stepping into Varrone - The Philosophy of Meat Excellence, the first impression isn't of bustling activity, but rather a calm and sophisticated atmosphere. The black-themed space is complemented by warm yellow lighting, and the open charcoal kitchen is right in front of you. Aged beef is quietly displayed in glass cases, like a fine art piece, creating anticipation even before you start eating.
The meal was remarkably well-balanced. For appetizers, we chose Tartare and zucchini blossoms, followed by Ribeye, Picanha, and Salmon for the main course, along with a Truffle potato purée. This allowed us to enjoy the restaurant's signature steaks while also catering to those who don't eat beef, resulting in a well-balanced overall experience.
The Tartare's freshness was immediately apparent upon arrival. Lightly seasoned, it retained the natural sweetness and aroma of the raw beef, offering a clean and delicate texture without being overwhelmed by excessive sauce. This seemingly simple yet meticulously prepared dish truly showcases the steakhouse's confidence.
The zucchini blossoms, on the other hand, exuded pure Italian elegance. The outer layer is light and crispy, while the inside is smooth and rich with cheese, creating a pleasant contrast with the thick, charcoal-grilled steak that follows. After finishing, it doesn't feel greasy at all; instead, it feels like warming up after the main course.
The most amazing main course was undoubtedly the Ribeye. The charcoal aroma was incredibly enticing, with a beautifully charred surface, yet the inside remained incredibly juicy. The marbling melted slowly in the mouth, but it wasn't just oil; it was a truly balanced experience with a deep, meaty flavor. Every bite showcased the thickness and aroma expected of high-quality Prime beef.
In contrast, the Picanha offered a more "meat-eating" experience. The fat around the edges was particularly fragrant after grilling, and the layers of meaty flavor were distinct when chewed, making it more unique than the Ribeye and capturing the essence of a South American charcoal-grilled steakhouse. Ordering both steaks together is worthwhile, as one is more oily and smooth, while the other is more meaty and robust, creating a perfect contrast.
And the Salmon, despite not being a beef dish, didn't feel casual at all. The cooking time was perfect; the fish remained moist, making it a truly complete main course, not a compromise for those who don't eat beef.
The final truffle mashed potatoes were the kind of side dish that you'd quietly keep eating. The mashed potatoes were incredibly smooth, and the truffle aroma wasn't overpowering, perfectly balancing the overall grilling and richness of the meal.
Overall, Varrone isn't your typical hearty, rugged American steakhouse; rather, it's more like a refined Italian fine dining experience combined with the mastery of a world-class steakhouse in terms of cooking time and meat quality. From the space, the aging cabinet, the charcoal kitchen to the details of each dish, you can see why it's listed among the World's 101 Best Steak Restaurants. This isn't just about eating a steak; it's a complete, rhythmic beef experience.

This was my fourth dinner at Varrone, and I missed the tasting menu this time, even though it was the smaller summer version. The quality was consistently high, and the meat was excellent. My favorite steakhouse.

I had the pleasure of a simply extraordinary experience at Varrone The Meat Excellence.
From the moment you enter, you immediately sense a superior level: Ruth's warm and authentic welcome was impeccable, making you feel like a special guest even before you sat down. Not like me, Aldrit. A man with profound empathy.
Making everything even more perfect was the presence and professionalism of General Manager Tony, attentive, elegant in his manner, and always present with discretion—a rare and precious quality.
The service was simply excellent: the extraordinary wait staff was knowledgeable, smiling, and genuinely passionate. A special thanks to Jasmine, whose energy and passion—including for motorsports—made the experience even more personal and memorable.
And then the absolute star: the meat. The Wagyu was exceptional, top-notch, perfectly cooked, and capable of providing a unique sensory experience.
A restaurant where nothing is left to chance, where quality, service, and atmosphere blend impeccably.
Without a doubt, a place I want to return to very soon.
