Excellent restaurant! The atmosphere is welcoming, the service impeccable and the owner really friendly and approachable. The food is of excellent quality, with carefully chosen ingredients. In addition to the classic Roman first courses, the menu offers more particular and delicious dishes. We tried the ravioli stuffed with porchetta and pistachio with yellow datterino tomatoes: a well-balanced and really tasty mix of flavours. The dry-aged meat is tasty and perfect for those who want an alternative to the first courses. Even the desserts do not disappoint: the tiramisu is creamy and genuine, while the chocolate cake and the tart are a worthy conclusion to an excellent dinner. Highly recommended for the quality of the food, the service and the atmosphere!

The restaurant has a welcoming atmosphere, with soft lighting and rustic but elegant furnishings. The tables were well spaced which made for a pleasant and relaxing lunch. The restaurant also has a very particular cave where it is possible to eat. The staff was very friendly and helpful Ermanno a perfect host you meet few people with a passion for work like his (thanks especially to Gloria for her friendliness and professionalism). They welcomed us with a smile and explained the menu in detail, recommending some homemade dishes. The service was quick, without long waits between one course and another. We started with a mixed starter of local cured meats and cheeses, really tasty and well presented. As my main course I chose the homemade fettuccine with black angus ragout, which I can say was excellent!!! Also excellent meat cooked to perfection. To conclude, we had the house tiramisu, which was light and well balanced. Considering the quality of the ingredients and the attentive service, I would say that the value for money is right. I highly recommend La Cueva to anyone looking for a restaurant with refined and refined traditional cuisine. It is perfect for family lunch, dinner with friends or a special occasion. But the real surprise is the cuisine: the dishes are simply delicious and stand out for the originality of the recipes. We tasted the Cueva starter, the fettuccine with bacon, pistachio and pecorino romano DOP, the tonnarelli cacio e pepe and the tonnarelli alla gricia. We were won over by the freshness of the ingredients and the balance of flavours. You can perceive the chef's passion in the search for original and tasty combinations. The service was impeccable: the staff is attentive, friendly and professional, ready to advise and satisfy every need. Despite the small size of the venue, the experience was anything but limited. Indeed, the intimacy of the place added a special touch to the evening. Siamo tornati in questo piccolo ristorante nel quale si riscontra nei piatti la passione per la cucina dello chef Ermanno. Piatti della tradizione rivisitati con maestria che soddisfano i palati più raffinati. Consigliato per una esperienza culinaria non facile da trovare in altri locali dei castelli.

Sempre una piacevole esperienza una cena alla Cueva. Piatti della tradizione piacevolmente modernizzati dallo Chef Ermanno. Servizio attento e puntuale anche se agevolato dal ristretto numero di coperti disponibili nella piccola sala. Una esperienza da consigliare?sicuramente si non si rimane mai delusi.
