Siamo tornati in questo piccolo ristorante nel quale si riscontra nei piatti la passione per la cucina dello chef Ermanno. Piatti della tradizione rivisitati con maestria che soddisfano i palati più raffinati. Consigliato per una esperienza culinaria non facile da trovare in altri locali dei castelli.

Very welcoming place with fully qualified staff, super creamy carbonara! Fettuccine, bacon and artichokes have never tasted so good! We will definitely return, the owner is very friendly and helpful, he explained to us in detail all the quality of his products, highly recommended!!

Sempre una piacevole esperienza una cena alla Cueva. Piatti della tradizione piacevolmente modernizzati dallo Chef Ermanno. Servizio attento e puntuale anche se agevolato dal ristretto numero di coperti disponibili nella piccola sala. Una esperienza da consigliare?sicuramente si non si rimane mai delusi.

The best first courses eaten in Rome and its surroundings, even in comparison to renowned restaurants in Trastevere!!! Next time I'll try the latter. The location is a bit small but at least it is secluded from all the trattorias in Ariccia.

03/01/2025: It's amazing! The atmosphere, the food and the attention. We have repeated our stay in Rome. Besides being good, at a super reasonable price. You can't miss it. Thank you very much ❤️
02/01/2025: You can't leave Rome without trying this place. A small place in the heart of Trastevere with an exquisite product and an even better service. The focaccias were delicious, but special mention went to the pork and dried tomato one. It also has charcuterie boards that make the perfect plan with an Italian wine. We will return!
