After wide researching, this restaurant offered the best tasting menu in Florence. Beautiful restaurant in an easy location. Service was kind and attentive. Unbelievable that this is 1 Michelin and not 2! Every plate was truly delicious and packed a real tasting punch. What I liked most was the staff who were very warm and professional. As a lone diner I was really well looked after. The chef is inventive without being crazy. The whole kitchen team is very, very skilled especially the Sous. Will be my number 1 recommendation for Michelin dining in Florence.

Our first time at Saporium and it was possibly the most memorable meal we have enjoyed in Italy over the years.

Went here with my husband on our trip to Italy - the food, experience and atmosphere were all incredible. The ingredients were fresh and delicious, and the chef and team must be so proud of what they create! The staff were so friendly and accommodating and I think about our visit often - I hope to return some day.

We’d been several times to their sister restaurant “Trattoria sull’Albero” at the gorgeous hotel Borgo Santo Pietro in the Tuscan countryside, and were curious to visit this one in Florence and were equally enchanted by the experience ! Saporium Firenze delivered an outstanding experience from start to finish. The food, service, and wine pairing were all exceptional. The risotto absolutely blew our minds, and every single dish was truly remarkable. Without a doubt, the best meal we had in Florence. For context, we also dined at Santa Elisabetta (2 Michelin stars) and it was a real disappointment, so we don’t say this lightly. We’ve eaten at many Michelin-rated restaurants across three continents and are very familiar with what excellence looks like. This place won’t disappoint. The wine and olive oil were so good that we even bought some to take home. Highly recommended.

This was our second visit to Saporium and probably will be our last. It was just an OK experience nothing really stand out or special about the food, staff or overall experience. Looking back I think when we dined here last year Ricardo was the reason we had such a great time. It's a shame he's not there anymore. Ricardo, you will be missed!

We recently had the pleasure of dining at Saporium Firenze, and the entire experience was memorable from start to finish. Nestled in a refined and beautifully curated setting, the restaurant immediately stands out for its atmosphere – elegant yet warm, with an attention to design that sets the tone for what’s to come. The service was truly impeccable. From the welcome to the final goodbye, the staff was attentive, knowledgeable, and always professional, without ever being too formal. Every detail was carefully managed, making us feel genuinely looked after throughout the evening. We decided to go all in and try all three tasting menus – vegan, seafood, and meat – and it turned out to be a fantastic way to explore the full range of the chef’s creativity. The presentation of each course was visually stunning, with a clear focus on seasonality, balance, and technique. Most dishes were truly excellent – refined yet flavorful, innovative without being excessive. There were a couple of courses that felt a bit less convincing in terms of flavor combinations or impact, but these were rare exceptions in an otherwise impressive sequence. A special mention goes to the cocktail bar next door, owned by the same team. We highly recommend arriving a bit earlier and enjoying a pre-dinner drink there. The mixology is on point, the ambiance is sophisticated, and it sets the mood perfectly for the evening ahead. In summary, Saporium is a fine dining experience that lives up to expectations – thanks to the quality of the ingredients, the care put into each dish, the beautiful setting, and a staff that clearly takes pride in what they do. We had a wonderful evening and we’re happy to recommend it to anyone looking for something special in Florence.

My husband and I were in Florence for our anniversary and were lucky enough to obtain a lunch reservation at Saporium. Given the intimate nature of the seating, it seems the dinner reservations would go quickly. The atmosphere and staff are incredible. The pride they have in what they do can be seen in every careful and thoughtful action and interaction with each guest. The decor is relaxing and serene, as if in the garden the delicious meals are being prepared from. Everyone was incredibly attentive and the pace of meal was completely on point. We have been to Michelin star restaurants across the US and Italy, I have to say I was shocked that they don’t have more Michelin stars with how delectable the food is. Saporium is only rivaled in my opinion by Eric Ripert’s La Bernardin. We tried the chefs tasting menu, which was a cross amongst their other tasting menu options. Every course was as delicious as the last, not one of our ten courses disappointed. The flavors were perfectly harmonized and danced across our taste buds with every new bite. We could have stayed for hours, continuing to be treated to this culinary gift. We will be back to Florence and most certainly back to Saporium Firenze as we cannot wait to try a dinner service!
