Updated Review. Mistake handled appropriately.
After my initial review regarding an overcharge, I wanted to provide an updated and more complete perspective following direct communication with the restaurant.
First and foremost, the dining experience itself was truly exceptional. The food was outstanding—thoughtful, beautifully presented, and executed at the highest level. Every course felt intentional and memorable. The service was equally impressive; the staff made us feel like a true priority throughout the evening, creating a very personal and elevated experience that stood out as the highlight of our trip to Florence.
We also had a few requests for modifications to the menu, which were handled with remarkable care and craftsmanship. The team approached these changes with the same level of detail and creativity as the standard dishes, which we greatly appreciated.
There was, unfortunately, an overcharge that initially led to my previous negative review. However, after connecting with the restaurant, I can confidently say their response and professionalism in addressing the issue were excellent. While there was a delay in identifying the charge—largely on our end due to not catching it until months later—their team handled the resolution thoughtfully and fairly, going above and beyond to make things right.
As someone who runs a business, I understand that mistakes can happen. What truly matters is how those situations are handled, and in this case, they demonstrated integrity and a genuine commitment to their guests.
We would absolutely return and would look forward to visiting again or exploring their other locations. I would highly recommend this restaurant to anyone seeking a truly exceptional dining experience in Florence—it was, without question, the best culinary experience of our trip.

After wide researching, this restaurant offered the best tasting menu in Florence.
Beautiful restaurant in an easy location.
Service was kind and attentive.
Unbelievable that this is 1 Michelin and not 2! Every plate was truly delicious and packed a real tasting punch.
What I liked most was the staff who were very warm and professional. As a lone diner I was really well looked after.
The chef is inventive without being crazy. The whole kitchen team is very, very skilled especially the Sous.
Will be my number 1 recommendation for Michelin dining in Florence.

Went here with my husband on our trip to Italy - the food, experience and atmosphere were all incredible. The ingredients were fresh and delicious, and the chef and team must be so proud of what they create! The staff were so friendly and accommodating and I think about our visit often - I hope to return some day.

Incredible food, incredible staff, and beautiful atmosphere. We’d been several times to their sister restaurant “Trattoria sull’Albero” at the gorgeous hotel Borgo Santo Pietro in the Tuscan countryside, and were curious to visit this one in Florence and were equally enchanted by the experience ! We look forward to going back soon !

Saporium Firenze delivered an outstanding experience from start to finish. The food, service, and wine pairing were all exceptional. The risotto absolutely blew our minds, and every single dish was truly remarkable. Without a doubt, the best meal we had in Florence.
For context, we also dined at Santa Elisabetta (2 Michelin stars) and it was a real disappointment, so we don’t say this lightly. We’ve eaten at many Michelin-rated restaurants across three continents and are very familiar with what excellence looks like. This place won’t disappoint.
The wine and olive oil were so good that we even bought some to take home. Highly recommended.

This was our second visit to Saporium and probably will be our last. It was just an OK experience nothing really stand out or special about the food, staff or overall experience. Looking back I think when we dined here last year Ricardo was the reason we had such a great time. It's a shame he's not there anymore. Ricardo, you will be missed!
