Well, I'll tell you right away: I wasn't expecting it like this.
There were five of us leaving Turin for a dinner with friends, and we ended up in Trana almost by chance. The place looks great from the outside. Inside, it's really well-kept, with a large dining room and windows overlooking the mountains. One of those views that makes you want to stay there even after you've finished eating.
What we ate: We started with a nettle flan on a bed of herbs and a fresh salad. I know, it sounds strange—nettles, yes. But trust me, it was serious stuff. Delicate, fragrant, delicious. We finished it in thirty seconds and wanted another round.
Then came my first course, and there we all looked at each other: Carnaroli rice with parsley and frogs. Frogs, yes, you read that right. Seared and tossed in aromatic bread, crispy on the outside and soft on the inside. The rice was creamy, the parsley was perfect, and the frogs were honestly the surprise of the evening. Strange dish? Yes. Good? Very good.
The portions were generous, in the sense that we stopped before the main course because we couldn't take any more. However, five of us shared a small pot of fried anchovies, and that was excellent too. Simple, classic, perfect to finish.
To drink, a bottle of sparkling wine to start, very good, and then a Triple AAA still white that paired well with the entire dinner. Nothing over the top, but both were spot on.
In short, La Betulla is one of those places that sticks in your head. Authentic cuisine, with ingredients you wouldn't normally use, in a place that's worth the trip for the view alone. I'll definitely be back.

A first course, "penne with guinea fowl ragù," offers an unparalleled balance of flavor and delicacy, a rare treat when it comes to this type of meat. This dish alone is worth the trip: unmissable and—among other things—surprising for its price, courtesy, and quality of service.
