We enjoyed an excellent dinner, thanks to a blend of both human and raw ingredients. The staff is well-trained and friendly, but the Chef, who is also the owner of this beautiful Cagliari gem, stands out above all others. Originally decorated and featuring a soundtrack of vinyl records, the restaurant offers traditional cuisine, revisited with original touches. We recommend a visit, but reservations are essential.

I reluctantly have to give it 3 stars. I say this because it doesn't reflect the professionalism and friendliness of the waiters.
The freshness of the food is beyond discussion; the problem lies in the kitchen. I'm of the opinion that if you pay, you should eat well. Well, I didn't eat well; I ended the dinner with a kebab. For starters, I ordered Josto's antipasto tosto, but I'd leave out the "tosto" (tough) part. It's not tough at all.
The problem lies in the main course, where I ordered boiled and then roasted meat. A glob of oil and meat that was hard to swallow, even with water. I chose not to order a glass of wine, dessert, or their coffee by choice. I wanted to leave immediately. I must say that Josto's cuisine deeply disappointed me, unlike Frammento and Etto, perhaps one of the worst culinary experiences.
I give full marks to the bread; it was excellent.
I photographed the only dish that was above average because the caper cream was good.
I paid around 80 euros per person, but the price didn't even remotely reflect the dishes offered. I left very disappointed.

A truly surprising culinary experience in the heart of Cagliari.
Josto is a must-visit whenever I'm in Cagliari. It's a restaurant that successfully combines Sardinian tradition and modern experimentation, thanks to the creative hands of chefs Pierluigi Fais and Matteo Russo. Each dish showcases the region with originality, balance, and aesthetics. The plating is meticulous, the flavors are well-defined, and the dishes are beautiful to look at. The chefs don't simply reproduce traditional dishes, but strive to reinvent them, with distinct flavors and a touch of modern flair. Personally, I would never pass up spaghetti with bottarga (made in-house).
The restaurant is welcoming and modern, with an elegant post-industrial design that complements vintage details, wood, and thoughtful furnishings. The thoughtful lighting and open kitchen add a touch of elegance, creating a refined yet relaxed atmosphere.
The chefs, who are always present with guests, know how to advise on every menu choice and are very attentive to customer feedback. The staff is professional, helpful, and attentive in guiding you through both the dishes and the wine selection, many of which are Sardinian. Their wine list and selection of Sardinian wines are noteworthy.
The tasting menu is highly recommended, ideal for those who want to discover more nuances of the gastronomic journey.
P.S.: The desserts are also excellent and should never be missed.
Prices are in line with the quality offered.

Located centrally in the old town, this restaurant resembles a modern, converted garage, adorned with art and original design. The wine selection is exceptional. We opted for the multi-course menu with its strong regional focus, which we enjoyed. While not every course achieved perfect flavor harmony, some thrived on contrasts in texture and taste, featuring challenging aromas. The presentation was fantastic, and the restaurant is undoubtedly one of the best in the city. Towards the end, the atmosphere was somewhat marred by very loud music. The service staff, however, were warmly attentive.

Absolutely stunning experience. First off, the staff is friendly and down to earth. They were patient in speaking English with us, or when asking basic questions about the food. We ordered the tasting menu and it did not disappoint. Innovative ideas combined with the historical history of the island combined onto each plate. From the fish with a delicate cheese sauce, to the risotto with wild asparagus, to the incredible dessert that we just were not expecting, everything about this place screamed Michelin. Easily one of the best meals of my life. 10/10
