We had an absolutely incredible time at Il Trombone, the pastas were to die for and the service made us feel right at home! Highly highly recommend this spot for anyone looking for a truly local experience in Spello with fantastic food!

We had lunch at this restaurant on a Sunday when Spello was packed with people attending a wine event. We entered and found no staff to welcome us. We entered the restaurant and waited a bit for someone to welcome us (the tables inside were occupied by only a small group; the rest of the place was empty). We attempted to access the terrace, but were blocked by the only restaurant staff member we could see. When we asked to eat outside, he told us it was all booked and invited us inside—a shame, because from what we could see, the terrace didn't appear to be full. Furthermore, as he seated us, he warned us that there would be a long wait for our food because they were having problems in the kitchen (we had the impression that he was asking us to leave, a fact confirmed by observing how other people who wanted to sit down to eat were treated). Once seated, we waited a quarter of an hour to place our reservations, and as instructed, we waited quite a while for our appetizer, wine, and cutlery, which we had to ask for. We didn't have to wait for the first course because it arrived while we were still eating our appetizer. The positive aspect of all this was the quality of the food: everything was very good, except for the pumpkin cream in the first course, which was cold compared to the rest of the dish, which failed to retain its heat.
While we waited for our dishes, we stopped to admire the restaurant: very charming and historic. The terrace, which we were able to admire at the end of the meal (which we later discovered had many free tables, as was the rest of the restaurant), was very beautiful and had a remarkable view, but it was a shame we couldn't enjoy our lunch there. Continuing our observation, we noticed that the chair at the table next to us was very dirty with dried coffee splatters. We couldn't have coffee at the end of the meal because the machine had broken. Added to all this are the prices which are not exactly cheap, on the contrary.

Great experience! Spectacular view. The restaurant is reached via charming alleys. Lunch is slow food, where you don't have to rush your meal, but rather enjoy the view and the food, made with love.
Dogs are welcome.

We have eaten here twice now, sitting outside in the shade sharing the amazing views. The food was fantastic (carbonara gets a special mention but also the starter board of mixed meats and cheeses, the steak tartare and their gnocchi rucola e Gorgonzola). Choosing wine was easy - red and/or white, both delicious! Lovely lady seems to both cook and serve was very sweet.

A limited menu with typical dishes.
We went on a quiet evening; there was only one waitress, but she served us well and quickly.
Let's just say the highlight is the panoramic terrace, overlooking the hills. The food is honest, and the bill is reasonable.

A symphony to be tuned.
It's always difficult to write a review when the experience doesn't quite resonate. At Trombone, the overture is promising: the courteous and helpful staff plays their score with good rhythm, and the dishes arrive on time. The terrace is a pleasant setting for a summer dinner, but the interior, unfortunately, lacks light and atmosphere, appearing a bit too "minor-key."
The restaurant's soundtrack is provided by a small speaker that fails to evenly distribute the music, leaving the room in a dissonant silence broken only by unpleasant notes—a jarring detail, especially for a restaurant named after a wind instrument.
Culinary-wise, the dishes are executed with reasonable technique but without any melodic flourishes. The cooked vegetable appetizer and baked potatoes are neutral, while the truffle pasta, though elegantly presented, lacks the expected crescendo of flavors: the truffle doesn't stand out from the crowd, and the lack of salt makes it necessary for the diner to directly intervene with salt, pepper, and oil to re-tune the flavors.
A decidedly off-key note? The appearance, between one movement and another, of a cat, strolling slowly between the tables. A curious detail for some, but for others, it could disrupt the harmony of the experience.
The menu, as other reviewers have noted, offers a rather limited selection: a choice that, if well-orchestrated, could become a strong point, but for now it feels more like a timid solo that doesn't dare.
This review isn't meant to be a scathing judgment, but rather an invitation to re-tune. The basics are there: the score can work, it just needs a few more rehearsals, a more inspired conductor, and, above all, the will to transform a rough draft into a memorable concert.

For the record, I've never ordered gluten-free pasta, but I've ordered something vegan.
