⭐ Extraordinary experience at Glass Hostaria ⭐
I had the pleasure of trying the Glass Menu and was deeply impressed by the originality and balance of the flavors offered.
🔹 The barbecued veal tongue was a true revelation: tender, perfectly smoked, and made even more interesting by the sweet-tart contrast of the two apple textures, with a touch of 'nduja adding a pleasant spiciness. A surprising dish that takes traditional Roman cuisine to the next level.
🔹 The ravioli del plin all'amatriciana with crispy bacon is a celebration of Lazio cuisine: the pasta is masterfully rolled, the filling rich in flavor, and the crispy bacon provides an irresistible savory note. A perfect balance between comfort food and haute cuisine.
🔹 Finally, the "bread, butter, and jam" dessert is a nostalgic homage to the flavors of childhood, yet revisited with technique and refinement: a dessert simple in concept yet extraordinary in execution, with textures and flavors that harmoniously combine.
🪟 Venue and service: The setting is modern and refined, with an elegant yet welcoming atmosphere, perfect for enjoying dinner without feeling out of place. The service was attentive and professional, present but never intrusive, and above all, not overly formal: an ideal balance that makes you feel at ease.
Glass Hostaria confirms itself as one of the best restaurants in Rome for those seeking a modern gastronomic experience with a connection to Italian roots. Highly recommended!

10/10 — Bravo. A must-try experience!
From the moment you enter, you’re welcomed into a space that perfectly blends modern elegance with earthy warmth — tall exposed timber ceilings, textured brickwork, sleek ambient lighting, and comforting air conditioning. The staff’s greeting was warm and professional.
I was promptly seated and presented with the wine list and menu. Unfortunately, I couldn’t drink wine due to a minor head cold, but the staff’s suggestions and explanations were excellent. (As an Australian, I really appreciated the English — it made everything seamless.)
I chose the “Glass Tasting Menu”, which you can tailor with substitutions from the vegetarian menu — the flexibility was very much appreciated.
And the food? Absolutely unforgettable!!
What truly sets Glass Hostaria apart is the attention to detail, the depth of flavour through different ingredients, and the creative uniqueness of every dish. I felt like there was a story being told by the kitchen …. And I was very happy to be included.
The first appetiser and first course are eaten by hand, (I personally love this), a touch that draws you closer to the ingredients and sets the tone! (I should add, the remaining meals are eaten with cutlery).
As the courses continued (and my waistline expanded…), the experience only got better. The Chef’s Pasta and the lamb were absolute standouts — dishes I’ll be dreaming about long after I leave Rome.
Having dined at other Michelin-starred restaurants across Europe and London, I can confidently say Glass Hostaria genuinely stood out. It’s not just technically excellent — it’s been a memorable experience…. And for me, that’s what dining should be!
I wish we could return… but our journey continues. I sincerely hope we meet again.

Originality and Disharmony: A Michelin-Starred Experience Worth Reviewing
My experience was not entirely satisfactory. Although the dishes stood out for their originality and creativity, the final result was not always convincing: some dishes were excessively sweet, while at least one lacked balance in the saltiness, compromising the overall harmony of the meal.
The quality-price ratio, compared to other Michelin-starred restaurants, seems unjustified, leaving a sense of disappointment.
The spatial organization does not facilitate the experience: in my case, a supporting column obstructed the view, negatively impacting the enjoyment of the restaurant.
Chef Cristina Bowerman, despite being very active and present in defending the category on social media, showed uneven attention to the tables, repeatedly lingering on just one, leaving the others without any sign of presence or engagement.

I have been to Glass Hostaria twice. The first time I opted for a choice from the menu, the second time for a tasting menu. Super staff. Excellent cuisine. A little treat.

We arrived in Rome the day we ate at Glass Hostaria, and it certainly was a great first meal. From the canapés and amuse bouche, to the dessert, and the wine pairings that went with them, it was a great experience. We did the tasting menu, and the portions were great, the wines went beautifully with the food, and the room and service were great.
