The menu is very small, and you'd expect impeccable quality from a 1-star Michelin restaurant, but unfortunately, our duck was too chewy—it was strange how the chef had managed to get it out. To the restaurant's credit, they offered another choice and provided a complimentary chef's dish for my companion. The tartare with Wagyu bresala was amazing, and the vegan Wellington was also good. The rest of the dishes didn't grab me; I think the duck would have been delicious.

We had an absolutely exceptional time at Glass Hostaria on the evening of December 31st. A memorable experience from beginning to end, both in terms of the food and the personal touch. The setting, at once cozy, warm, and resolutely modern, immediately puts you at ease. The welcome was simply perfect: attentive, professional, and discreet—exactly what you expect from a top-notch establishment. The menu was modern, bold, and remarkably well-executed. The meal began with a caviar amuse-bouche, accompanied by mini blinis and a lemon butter mousse, absolutely perfect for whetting the appetite. The monkfish, cooked to perfection and subtly seasoned, offered a remarkable balance of textures. The vegetarian dish featuring mushrooms was a delightful surprise, both creative and profoundly flavorful. The summer truffle pâté en croûte was delicious—a real favorite of my wife's. The liquid ravioli with 60-month aged Parmesan were simply divine, without a doubt my favorite dish of the evening. The dessert, very lightly sweetened, was perfectly balanced and concluded the meal with great elegance. Special mention goes to the final amuse-bouche, a bold and unexpected savory surprise: a revisited sausage and lentil dish, original and brilliant, to bring this succession of courses to a close. The wine pairing was also perfectly executed, meticulously planned from start to finish: Champagne, a mineral white, a more structured and powerful white, a very fruity red, and then a late-harvest white to accompany the end of the meal. We also had the pleasure of speaking with Chef Bowerman on two occasions, very pleasant and precious moments that further enhanced the atmosphere of the place. And the thoughtful touch of the complimentary bottle of olive oil was the perfect finishing touch. Absolutely flawless. An exceptional restaurant that we wholeheartedly recommend and where we will return with immense pleasure. Well done to the entire team!

The setting is elegant and very comfortable, the service pleasant and attentive (though far from perfect), however, the restaurant is nowhere near the standard of a Michelin-starred establishment. At this price point and with this level of expectation, one anticipates dishes that elevate Italian flavors and showcase local, seasonal produce. But there's none of that; the dishes are often bland, even the pasta! The menu does have the honesty to indicate which products have been frozen (short-term freezing for very good reasons), but why not choose other products that can be prepared fresh? In short, this restaurant is very disappointing and has no place in the Michelin Guide, let alone with a star!

The food was delectable and the service was really professional too. I am extremely impressed and hope to bring my wife here the next time. The pricing is reasonable too.

We really enjoyed discovering the craft, in and outside of the restaurant. It felt as if clues had been layered for us to decipher and draw our own interpretations. Definitely a playful and refreshing experience, if we could travel back in time we'd very much like to renew it as first timers.

It's perfect! If you want to invite someone to a restaurant and have a special meal, check out the restaurant. The chef's autographed menu is a great deal. An unforgettable experience! The tasting menu was very interesting and innovative. Everyone on the staff was very helpful and friendly, and the chef, who came to our table a few times to chat, made a pleasant yet professional impression. :) What an amazing experience! The tasting menu was quite innovative, and several of the dishes were just perfect. I highly recommend it. I will keep my fingers crossed for at least one star.

Amazing food. Totally mind blowing experience on what was for me, a very special occasion. Each dish was easily some of the best food I have ever eaten. The textures, flavors, and presentation were all quite immaculate, served by prompt, polite, but not pushy waiters. This was something that I initially felt a little nervous about because I very rarely eat at fine dining establishments. I was a little worried we would not be welcome or that I would feel out of place, but the waiters helped us understand exactly what we were eating, how to eat it, and generally made the experience amazing. The ambiance was also quite perfect. Very dimly lit but with lights shining directly into the table to highlight the food we were eating and create a little bubble around the moment. It all felt quite like a dream. I only have two complaints. First, and this is quite minor, is that with the caviar dish the two of us were served an odd number of pieces of bread, which made it somewhat awkward as one of us would have to eat one more/less. Not a huge deal but something I think could be noted by a restaurant of this caliber. Similarly, and more importantly was the glass cheesecake dish. I dined here in December and while the dish was excellently crafted, I wondered why we were seeing berries (now more than two months out of season) on the dessert. I can’t blame the restaurant for the berries being fairly wilted and flavorless, but I can certainly wonder why we were not seeing more seasonal flavors incorporated into our dish. We are in the heart of citrus season in a citrus region, after all! This was actually very surprising to me and definitely lowered my respect just a little bit for the establishment. However, the dish was still obviously very skillfully made and yummy nonetheless. I can’t give the experience anything other than five stars. Bravo.
