Locale piccolo e quasi sempre pieno per cui è necessario prenotare e a volte anche aspettare , ma il personale è molto gentile, giovane e veloce nel servizio. I panzerotti sono ottimi, l'impasto è leggero e croccante, i ripieni molto vari, dal classico "mozzarella e pomodoro" al più elaborato "tartufo e lardo di Colonnata" e tanti altri. Unica pecca del menù, a mio avviso, sono gli antipasti, per la maggior parte in stile americano a base di pollo fritto, chips e carne essiccata, mancando completamente quelli della nostra cucina. Comunque è un locale da provare assolutamente. Ci ritornerò sicuramente.

I have had the pleasure of trying Ghiotto several times, both for lunch and dinner, and I think the time has come to share my experience.
Entering Ghiotto is like feeling at home. The environment is welcoming and the food can satisfy every type of palate, from those who love more robust flavors like me, to those who prefer lighter options. The versatility of the menu is a big plus: each dish is studied in detail, allowing everyone to find something suited to their preferences.
The real delight, however, comes in the evening with the panzerotti. They are simply the pinnacle of gastronomic pleasure, capable of satisfying both the stomach and the mind. The frying is impeccable, without ever being heavy. But what really makes the difference is the quality of the dough and the leavening. The dough, in fact, is subjected to a 72-hour maturation followed by a 24-hour leavening. This process guarantees light and digestible panzerotti, as I was told, avoiding that annoying stomach acidity that is often felt with less careful dough.
I'm always curious to know, and this is what makes the difference in a restaurant or any business, understanding the difference.
I had the pleasure of tasting several of them and I must say that they all exceeded expectations. The choice is wide, capable of satisfying the most classic tastes as well as the most refined ones, which makes it difficult to describe every single panzerotto, but I can say that they are all excellent. Furthermore, the seasonality of the ingredients adds a touch of freshness to the menu, and I can't wait for the turnip season to return to savor the panzerotto with turnips and Norcia.
In conclusion, Ghiotto is a true point of reference in Bari, an experience that you absolutely should not miss.

good panzerotto for a rotisserie panzerotto... and I underline rotisserie!! a bit of confusion about the various types of flavour, despite the nice idea of marking them with different signs and colours... and then too much pepper in the classic tomato and mozzarella.
disappointing service: potatoes and panzerotti arriving together, prices not all the same between the menu and the bill paid.
the location is very beautiful.
in short, there is better in Bari.

Panzerotti of all types and for all tastes. Pets allowed. Efficient service that knows how to listen to customers without wasting orders and time. Variety on the menu and the location, although small, appears clean.
Reservations are recommended and above all always ask if it is panzerotti day as they don't prepare them every day.

Very very good panzerotti, friendly and efficient staff. Also external environment with air conditioning and considering the high temperatures of our city it is truly pleasant to dine.

We were here on vacation and were looking for an alternative to the many pizzas we had eaten. Ghiotto Panzerotto promised to be a great place to go.
We ordered a Panzerotto SALAME PICCANTE CALABRESE E PROVOLONE, Assassina al Pomodoro and a HAMBURGER 220gr STRACCIATELLA E TARTUFO NERO PREGIATO. And unfortunately I wasn't aware before ordering the burger that it only consists of the patty plus the sauce and topping. So I wouldn't want to blame this because we could have informed ourselves in advance. However, an award that would be less misleading, such as a minced steak plus topping, would be ideal. The burger tasted okay, the meat was very juicy and well seasoned. Unfortunately, little to no trace of the truffle was noticed. The STRACCIATELLA was very creamy and also well seasoned, but for my taste it was too present throughout the dish, so the truffle had no scope to distribute its flavors. Unfortunately, we were also disappointed with the price of the burger. The 220g minced steak cost a hefty €14, which in our opinion is noticeable for a minced steak with moderately intense summer truffles.
The panzerotto was very fluffy and the filling was very impressive. This is a clear recommendation from us, and the price of the small fried louts remains untouched on the menu. To be expected for a restaurant that has Panzerotto in its name.
The Assassina al Pomodoro were very strong and seared, the spaghetti had an extremely crispy consistency, with the roasted flavors coming through very much. Personally, I unfortunately missed the kick of the sauce in the form of spiciness or general presence. However, this may also have been chosen deliberately, as the spaghetti is ultimately the main focus of the dish. The dish is also fairly priced at €10, which is why we clearly recommend it here too.
Now to the real crux of the visit. The service. We entered the restaurant shortly after it opened at 7 p.m. and were shown to the table after a short wait. When we got there, a waitress quickly asked us what we wanted to eat and drink, so far so good. Some time passed again and then the food arrived, which, contrary to our expectations, was brought to the table one by one with a certain waiting time. This wasn't a problem for us as we shared everything anyway, but I still think 5 minutes between each dish is a long time if everyone orders their own dish and wants to enjoy it. This makes it almost impossible to eat together. The waitress also didn't seem to have much fun with her work at this point. It felt as if the waitress no longer wanted to serve us as guests at this point. After asking about the bill, we were left sitting there for 15 minutes and were allowed to wait, even though the company would have been able to serve us much faster. Unfortunately, this left us with a lasting bad impression, although the restaurant definitely has its right to be part of Bari's culinary landscape.
Afterwards I would say that the restaurant impresses with its panzerottis. I am sure that great evenings can be spent here with friends or family over a Panzerotti plate. The only problem that becomes problematic is when certain waitresses damage the reputation of the restaurant and its external image.
Please don't take this as targeted hate speech towards a specific person in the restaurant, everyone has bad days. However, it would be desirable if professionalism were maintained to the extent that guests would not feel uncomfortable and out of place.

Abbiamo mangiato l'assassina ed è stata buona. Non la migliore mai mangiata ma molto buona. Locale pienissimo di sabato a pranzo. I camerieri anche se parecchio distratti ed era difficile riuscire a chiamarli anche per ordinare una bottiglietta d'acqua sono stati gentili. C'è la possibilità...
