An unforgettable dining experience in Moderna.
We had the tasting menu for lunch and every course was exceptional -creative, elegant, full of incredible flavour.
The presentation of each dish was beautiful, and every plate felt thoughtful and unique.
What made the experience truly extraordinary was the warmth and generosity we received throughout the meal. We were treated to several additional dishes, including an amazing ravioli dish.
Meeting Chef Massimo Bottura himself was an absolute highlight of our trip to Italy .
The service, atmosphere , and attention to detail were world class! Thank you 🙂

The two antipasti we ordered, while not bad or poorly prepared, weren't particularly enjoyable or worthwhile. However, the pasta dishes and dessert were absolutely delicious. We regret that the service wasn't up to par, as the language barrier prevented us from communicating clearly with the staff, even though Spanish isn't exactly an exotic language.

Incredibly delicious, locally sourced dishes. Impeccable service, a refined atmosphere that doesn't make you feel uncomfortable. And the price is proportionate to the quantity (more than adequate, not gourmet cuisine) and the quality!

In a word, perfect.
Visited during a business lunch, so I only had an appetizer and a main course.
The "mini" Emilia burgers, served as an appetizer, were a delicious surprise. The Tortellante tortelli with parmesan cream are simply "exceptional."
Impeccable service, a cozy and meticulously maintained atmosphere.
The price was in line with the quality of the dishes.

A wonderful and well-deserved experience. The welcome entree was sophisticated, unusual, and unexpected, but extremely welcome. For appetizers, we had the burger and pancetta, which were simply amazing. Tortellini, a touch of classic that never gets old, were truly excellent. The duck was delicious, melting when cut into. As with all the other dishes, you can see the absolute attention to detail.
The desserts, these too, were very good. The house-selected dish for the final course was a very pleasant touch.
Everything was truly excellent. A highly recommended experience, at times unexpected (in a positive sense), with dishes that were sophisticated and carefully prepared, yet plentiful; the staff was professional, friendly, and extremely kind.
Definitely worth returning.

During our visit to Franceschetta 58 in Modena, we had an extensive culinary experience with a clearly recognizable signature: modern Italian with creative twists and a strong focus on the ingredients.
We started with a number of refined amuse-bouches. The lettuce leaf filled with raisins was a beautiful combination of fresh and sweet, with a subtle balance that immediately set the tone. The broth made from vegetable trimmings with soy and sesame oil had an interesting concept but lacked some depth and finesse in its execution—one of the few moments where the standard dropped slightly. The sesame breadstick and potato focaccia, on the other hand, were technically strong and flavorful.
The monk's beard salad (agretti) with egg yolk, Parmesan, and cardamom powder was particularly successful: elegant, light, and well-balanced. The monkfish with marjoram, lemon, and fish stock was also correctly prepared and beautifully flavored, without excessive complexity. The pastas – typical of Emilia-Romagna – were interesting in concept (featuring black pepper, bay leaf, and grilled beans, among other ingredients), but fell slightly short in execution. They lacked precisely the refinement and depth expected at this level.
The burger was a nice interpretation: recognizable yet clearly more refined, featuring a salsa verde heavily reliant on parsley and a meat blend with a light addition of pork and plenty of Parmesan, which provided extra umami and juiciness.
Side dishes such as the potato millefeuille with thyme and sea salt and a garlic potato sauce were technically very well-executed and tastefully prepared – high-level comfort food.
One of the highlights was the fresh pasta with herbs and a chicory oil with kiwi sauce: original, exciting, and surprisingly well-balanced.
The dessert – dark chocolate with asparagus, semifreddo, and mint – was absolutely the most surprising dish of the evening. A daring combination that worked excellently and was executed perfectly.
Furthermore, the wine selection was very fitting and well-matched to the dishes. Conclusion:
Franceschetta 58 offers a creative and modern take on Emilia-Romagna cuisine, with strong technical execution and some truly surprising dishes. With the exception of the pastas and the broth, the standard was consistently high. The dessert and some vegetable dishes stood out in particular. Definitely recommended for anyone looking for an innovative yet accessible fine dining experience in Modena.
