We returned to Forma, and it was completely confirmed. Dinner for two, a cozy and quiet atmosphere—just what we were looking for. The chef's contemporary Italian cuisine is surprising without being artificial: the dish of the day, a grilled entrecôte agricole, was simply spot on. Cooking, ingredients, balance—nothing more. The wine list deserves a special mention. We chose a Scarpe Toste from Cantina Le Macchie in Castelfranco Rieti, a 14.5% ABV Gewurztraminer from Lazio that's hard to find elsewhere—not because there's a shortage of excellent wines close to home, but because few seek them out. Here, however, you can find them, and it shows. The detail that won us over was a small, almost banal gesture: at the end of dinner, the chef noticed our empty water glasses and refilled them himself, without anyone even saying a word. It's that kind of attention that separates a real place from just any old one. There's little to say about the price: for 20-25 euros less per person, you can eat at the pub these days. Here, you eat well, drink better, and feel at ease from start to finish. We'll be back.

We had dinner here on a recommendation from a local prior to joining a cruise the following day. Outstanding meals in all respects, the service was first class with our waiter matching wines to our meals. Well deserving of their Michelin rating. We still talk about that meal.

Very nice place, a former bunker of the 2WW that extends along the length of the restaurant. I ordered the 8-course menu with wine pairing: very good and interesting dishes, using excellent ingredients and excellent technical skills, excellent value for money, not surprisingly, it is listed among the Michelin starred restaurants.

We dined at this very pleasant and characteristic restaurant, with stone interiors creating a warm and welcoming atmosphere. We enjoyed a tasting menu designed by the chef and were truly satisfied. For our entrée, we were greeted with bread, butter, and anchovies—a small touch that was much appreciated. Among the dishes, the egg carbonara was excellent, creamy and intense, and the crispy octopus glazed with soy sauce, well-executed and flavorful. The first course was a sea bass amatriciana revisited with short tube pasta, original and very balanced. The second course was the black pig ribs, tender and flavorful. We paired everything with a Franciacorta Rosé "Ele" from the Ca' de Pazzi winery, a perfect match for the dishes we ate: fresh, elegant, and of excellent quality, with excellent value. We were so satisfied and full that we didn't have time for dessert. The staff were very kind and attentive, and the cuisine was meticulously prepared: a truly pleasant experience that we highly recommend.

A wonderful dining experience, with special dishes featuring unique, multifaceted flavors. Everything was light, perfectly balanced, authentic, and truly brought out the authentic flavors of the ingredients. From appetizers to first courses, second courses, and dessert, everything was a journey of taste. Excellent! There was a small improvement in the service, which was very technical and well-prepared, but a bit detached/mechanical, even rough at times: the aim is to blend food and wine culture with hospitality and customer service. The price of the dinner was increased by the choice of fine wine, but it was truly appropriate, in keeping with the experience, and well worth the expense!

Forma was a delightful surprise. We loved it at first sight. The atmosphere is welcoming and refined, with marble tables alternating black and white, like a checkerboard. Sofas line the wall, comfortable and elegant chairs, an open wine display, a barrel vault, and warm but unobtrusive lighting. The welcome is a complimentary gift from the house, with a tasting of a slice of multi-grain bread with flavored butter and anchovies, along with other seafood delicacies that the chef recommends eating with your hands. The other seafood dishes showcase imagination and creativity, with a selection of top-quality ingredients, for an orchestra of flavors. The peanut-crusted tuna is superb. The house oil, sourced from an olive grove in the Viterbo area owned by the chef, is also excellent. The desserts are also excellent. The staff is knowledgeable and knowledgeable. Highly recommended.

02/05/2026: If there's a place where mind and body can truly reconcile, it's undoubtedly Sintesi. Dining becomes a pleasant journey to discover dishes where innovation and tradition are not in opposition. Add to this a wine list that pays close attention to the local area and impeccable service, and you can truly say that a corner of paradise exists for our senses.
27/04/2026: We had an 18th birthday party. Many guests asked us if it was a Michelin-starred restaurant because of the quality and attention to detail of the dishes.

09/04/2026: What a birthday lunch!! I went today with my partner to celebrate my birthday. What can I say? Just looking at the menu and wine list, you're torn between "I can't wait to try as much as I can" and "I can't wait to go back with this group of friends and that one so they can try everything." Slow Food cured meat appetizers, with unique aromas and textures, mouth-watering veal sweetbreads, and their soft taco with tasty and flavorful sheep strips (made with traditional Turkish bazlama bread, also made with potatoes). We then tried Sora Maria's famous cannelloni, excellent! Finally, the trio of Roman lamb PGI: three different dishes, just the right amount to appreciate it in these three variations, each one better than the last. All accompanied by two recommended glasses of white wine, an excellent Trebbiano di Affile and a Fiano di Avellino. Finally, the desserts: pastiera, a huge portion, and a delicious chocolate and raspberry cube. Definitely worth returning to, especially to take advantage of the wine list. It features a wide selection of French wines, divided by region, along with quality wines from all over Italy and a wealth of local wines, especially Cesanese, of course. I congratulate you on your cuisine; the attention you put into it is evident and evident.
09/04/2026: Elegant but not overly so, sophisticated but in a "homely" way. It's the right place for those who want to eat seriously well! For those who know flavors and don't compromise on the palate! Always a guarantee!
