26/05/2026: Searching online for an interesting option for a Monday evening in Brescia, in the midst of the Covid-19 pandemic, I stumbled upon one of the few fine dining restaurants open on Monday evenings. And thankfully so. Otherwise, I might have ended up elsewhere. Dina, despite being less well-known than other more famous and renowned restaurants, has certainly left a profound impression on my (culinary) soul. Talent, creativity, passion, and professionalism. And definitely the atmosphere, reminiscent of '90s clubs in Milan or London, where you can eat and drink. An atypical entrance, perhaps anonymous, but one that immediately conceals a sense of mystery and intrigue. The hospitality was impeccable, thanks to the staff in the dining room, led by a young but highly experienced maître d'. Friendly, affable, yet always professional. Never over the top, never intrusive. In short, the preamble is one of the best. I won't dwell on the experience itself because that would be a complete spoiler. I'll write a few more lines about the food, though. The watchword: ZERO BANALITY. All the dishes are the result of careful study and sometimes barely concealed provocation. Just the right amount of creative, just the right amount of technical. Never overdone and never recognizable. You can choose from three menus with increasing levels of creativity, and even have the option to create your own custom menu: a plus. As for the dishes, almost all of them received top marks, I'd put the chicken (dehydrated and liquid), the cuttlefish, and the spaghetti with garlic and oil on the podium. But it's certainly not easy to forget the snails, the casoncelli, or, absurdly, the non-sweet dessert to finish. Lots of thumbs up, few weak points. Exceptional value for money. Courtesy and pampering, plenty. The chef is brilliant, his staff is excellent.
25/05/2026: Dina isn't just a restaurant; it's a pure experience. Maestro Gipponi's cuisine is a philosophy and concept that takes shape in bold and surprising dishes. Each dish stands out for its uniqueness or incredible flavor. It's not for everyone, but if you're a food enthusiast looking for something new and out of the ordinary, it's a must-visit.
