I'm a bit perplexed.
A truly beautiful location, nothing to add, just lots of compliments.
But the Michelin star, combined with such a location, raises expectations.
The 7-course tasting menu costs €110 per person, rising to €135 with wine pairings. The wines are truly excellent; it's clear there's been a lot of thought put into pairing them with the dishes. But what's perplexing are the dishes themselves: the dishes were bland, and there was absolutely no salt, and I don't understand how a restaurant like this could have such a lack. It seems, however, that this is precisely the chef's philosophy: using about 35% less salt in the dishes, using special cooking techniques to extract the salt directly from the vegetables. I think this information should be written on the menu, otherwise diners will be left feeling confused. Another thing that's a bit surprising is the price of the cheese platter: a trolley full of very interesting cheeses with the option to try them all. Too bad this was reflected in the final bill, an extra €90, €30 per platter (even though we ordered two).
However, the standout dish is the egg with pecorino foam and a comfit cherry tomato base.
So, that leaves a big question mark; the philosophy is nice, even just the fact that you never eat the same thing again, but honestly, it doesn't make me want to say "I'd go back."

For our 50th wedding anniversary, our children gave us a dinner at the Dolce Stil Novo restaurant at the Reggia di Venaria Reale. It was a wonderful experience.
We received the utmost attention from all the staff, including Chef Alfredo Russo, who came to welcome us. We enjoyed a wide variety of delicacies, from the aperitif to the final digestif. Every dish was carefully prepared and paired with well-balanced, high-quality wines.
It was an experience we'd love to repeat in the future. Our heartfelt congratulations.

The location is elegant but not overly formal. We chose the tasting menu, accompanied by a selection of local wines, to truly experience the chef's expert craftsmanship. A particularly positive aspect was the fact that they indulged us with a menu based solely on meat, something that's not always expected in a Michelin-starred restaurant. Of the seven dishes, some really impressed us, especially the emphasis on vegetables.
The reinterpretation of profiteroles was absolutely sublime, as was the Moscato d'Asti!

The food is an experience, a journey of discovery through taste and sensory exploration.
