There's a good variety of flavors to choose from. The kitchen isn't separate, but the gluten-free dough is: when they prepare it, they stop using flour, clean everything thoroughly, and work on a dedicated counter. The wood-fired oven isn't separate, but the pizzas are cooked on plenty of parchment paper to avoid cross-contamination.
