Spending an evening at 12 Apostoli is certainly a truly unforgettable experience.
An ancient restaurant, simply wonderful, where you can breathe history, culture, and passion, with a relaxed atmosphere.
The staff were impeccable: kind, attentive, and always smiling.
Each course is prepared down to the smallest detail, with authentic but not always surprising flavors. The appetizers are admirable, with a wide array of flavors. The sea bass and goat cheese wafer is a real surprise. Fantastic.
It's a shame about the first course, where my wife didn't like the smell and taste of the oven-dried yeast... and it is indeed very unique. And the same must be said for the partridge with pearà and brown stock, where the very tender meat was overpowered by a pearà that was truly... too peppery.
The wine pairings were good, except for the Barolo, which was perhaps a little dull for the accompanying courses. The sweet wine paired with the desserts was excellent... perhaps a little expensive!
The requirement that all diners must choose the same route is limiting.

Finding the words to describe the sensations you experience when tasting Chef Perbellini's dishes is quite difficult. Technique is always at the service of flavor, never an end in itself. It brings you closer to the dish and makes its flavors more enjoyable. The millefeuille is perhaps the best dessert I've ever tasted.

It's a cuisine that thinks, refines, and subtracts. If I had to summarize it, I'd say precision and lightness. Which, translated, means rock-solid technique and an almost obsessive sense of balance.
The 12 Apostoli are not just any restaurant; they are a part of the city's history, tables that have seen generations pass by. Giancarlo did what mature chefs do: he listened to the place, then rewrote it. Dishes that seem simple, but are constructed with obsession. The sweetness never tires, the acidity awakens, the bitterness closes the circle.
The three Michelin stars are the result of a coherent vision, pursued with almost monastic discipline.
He's a chef who knows France, and it shows in his stocks, his sauces, his focus on flavor over image. And then there's his signature style: dessert. It's no coincidence that many consider him a master of contemporary pastry making.
The young dining room combines expertise, precision, and attention to detail, offering impeccable service.
Chef Perbellini has managed to translate his name into various formats without diluting his identity.
A rarity.
He doesn't cook to impress his guests; he cooks for the love of his work.
At his side is Silvia, his cornerstone. His wife, his silent mentor.
Together they have shared dreams, sacrifices, and joys.

It's hard to describe the many courses, a crescendo of deliciousness and pleasure, in a beautiful setting and with service that pampered us from start to finish. The wines were excellent and perfectly paired. It was a wonderful experience to dine in front of the kitchen, with the chef always present. An experience to be repeated.

A unique experience, expertly led by Chef Giancarlo Perbellini and his impeccable staff. A magical location in what is also my favorite city, Verona. Every detail, from the welcome to the service, from the dishes to the wine pairing, was absolutely impeccable. Refinement, yes, but also a key concept: that the dish must, above all, be good, simple, tasty, yet refined and an expression of the Chef's vision of cuisine. So much so that before leaving, my eye fell on a small drawing depicting Casa Perbellini that read: "In this house you eat well," and that's exactly what I took away from this unforgettable experience. A special compliment to the staff, who were very empathetic during service, a concept that was anything but obvious, as the Chef also mentioned when greeting us at the table. Highly, highly, highly recommended as an experience, also because I believe it's not the three stars that make a restaurant, but rather the people behind these little treasures we are fortunate to have in our country and who make those three stars shine. 😉

🎗[THE PLACE] After achieving great success at his previous location outside the old town, Chef Giancarlo Perbellini decided to move the restaurant to the heart of the city, near Piazza della Erbe, the same location as his former 12 Apostoli restaurant where he first worked. Renowned interior designer Patricia Urquiola chose wooden furniture to create a warm atmosphere, complementing the fresco paintings and lighting inside. The main dining room is divided into two sections: Vòlto and Affreschi. There's also a Chef's Table, where the chefs have brought their open-view kitchen from their original restaurant in Piazza San Zeno, occupying more than half of the main dining room, allowing every seated diner to watch the chefs prepare the food.

Wow, that's all I can say. We've been to the 12 Apostoli restaurant twice and have always had a wonderful time. The food is superb, the service and friendliness of the staff are impeccable. Even for my boyfriend's birthday, they gave him an extra dessert with a birthday wish. It's beyond reproach, the stars are well deserved.
