Beautiful restaurant in the village of Canosa, excellent pizza, very friendly owner

It's the first time I've been unable to take a picture of a restaurant because I was so taken by the goodness of the food and what I saw with my own eyes... In the end I managed to take a shot of what I still had to eat, but believe me, this place is superb and the owner is a wonderful person!

The exposed stone vaults, the vintage details, the soft lighting, the tastefully and thoughtfully chosen furnishings... every corner speaks of care, identity, and a love for things done well. The pizza? Light dough, a well-aired crust, and evidently high-quality ingredients. Perfectly digestible, full and sincere flavor. The selection of cured meats (from ventricina to prosciutto) is authentic, not supermarket-quality—and that makes all the difference. You can feel that here, they cook with respect, not quantity. Friendly service, a welcoming atmosphere, and zero improvisation. A place I would recommend not to those looking for just "dinner," but to those who want an experience—slow, authentic, profoundly Apulian, without mannerisms. Carbon Dolce is a place with soul. And these days, it's increasingly rare to say so. 🔝

If you're on Erasmus, I highly recommend visiting the restaurant. It's the best food I've ever had. I ordered two plates of rice balls. I can't recommend just one because everything else is outstanding. 10/10.
