Hidden gem with some of the best food in Florence. Beautiful modern take on traditional dishes, with flavors I haven’t been able to find anywhere else. Incredible ambience and service with the owner Gabriele! Couldn’t recommend this place more, even though I selfishly want there to always be a table for me.

Experience in a niche restaurant: particular dishes that are rare enough to find on a menu, such as duck breast. Few seats guarantee a simple but attentive service.

B.O.r.G.O. came to the rescue when our previous dining plans for the evening fell through, and boy did they deliver. The food was incredible, the atmosphere was excellent, and we felt so welcomed. It is obvious that Gabriele, the owner, chef, waiter, dishwasher, and seemingly everything else, pours his heart and soul into this restaurant and his cooking. Our only regret was being too full for dessert (with a hand-drawn menu.) This place is a hidden gem, and I highly recommend everyone give it a shot when passing through Florence.

Un bel localino, semplice ma con una certa raffinatezza. I piatti sono quelli della tradizione toscana, ma sapientemente rivisitati, con esiti eccellenti, e il personale è molto gentile e disponibile.

La passione di Gabriele per la qualità e la ricerca assicurano un’esperienza di gusto e non solo… fate domande e scoprirete quanta preparazione e consapevolezza ci sono dietro una scelta di posizionamento sicuramente non scontata. Spero non cambino mai!

25/03/2025: Delightful and knowledgeable service, creative cooking, excellent wines and great value for money. A real find in Florence. Every dish was interesting and beautifully presented. Unlikely combinations all worked, for instance the somewhat bizarre sounding savoury Japanese crème caramel as starter. A triumph. A refreshing alternative to standard Firenze trattorias. Superb!
22/02/2025: Food with attention to detail, refined tastes, small note on the desserts that are very good, but not at the height of the appetizer and the second, the first slightly unbalanced in tastes, but always excellent. Informal and kind service, sommelier really good at giving advice. Small, simple environment, crockery in particular, not exactly high-quality Bormioli glasses with very thick glass, do not do justice to the sommelier who is instead very professional in suggesting and explaining the wines. Overall everything was very pleasant.
