I discovered them during a motorcycle stop, and now it's a must-try every time I'm in the area. They're phenomenal schiacciate and pastries, in any size you like, and you can even make them on the spot! Among the best in Tuscany, in my opinion. The service is fast and friendly, but there's usually a bit of a line. Those focaccias are definitely worth the wait!

First time here, crowded, but the line moves very quickly. The schiacciatas are truly mouth-watering, all the flavors exceptional, all accompanied by exquisite desserts and the staff are truly very kind and helpful.

We stopped on a Saturday, with the crossing closed... a veritable frenzy of people... but they handled everything quickly and efficiently.
There were three well-trained staff at the schiacciate counters, and the numbers went by pretty quickly.
Porcini mushroom schiacciata was lovely and piping hot.
I hope to see you all as prepared as you are even during less crowded periods.

This very famous schiacciateria is located in Consuma, on the border between the provinces of Florence and Arezzo, near the towns of Vallombrosa and Stia. Always very popular, so you'll need to take a number and be patient, but the wait is worth it, and the service is quite quick and efficient despite the crowds. Try the schiacciate alla sbriciolona and the Parma ham, both fabulous; I also tried the pastries, a portion of apricot tart and an apple strudel tart, which I'd call "standard." A great idea for an alternative weekend.
