And then comes the time for a break, when the region expresses itself through a dish. This stop takes me to La Rosa Blu, in Roccastrada. I order tagliatelle with wild boar sauce. But forget the classic ragù. Here, the wild boar takes center stage: slow-cooked meat, with a bold yet balanced flavor, without being overpowered by the tomato sauce. The tagliatelle, strictly homemade, absorb that sauce like only true artisanal pasta can. It's one of those dishes that don't try to impress. They simply tell the story of the Maremma, the authentic one. And that's also why I love business trips: because between paperwork, a plant, and a site visit, there's always a place or a flavor worth remembering. If you pass through Roccastrada, make a note of it.

03/07/2026: We visited this restaurant twice because we loved the food so much. The owners are very friendly and welcoming. The food is delicious and homemade.
