23/02/2025: A gastronomic journey without rules or preconceptions
The dinner was an experience outside the box, with a tasting menu that was able to amaze with its technique, unusual combinations and great attention to the quality of the ingredients. Each dish told a story, playing with consistencies, temperatures and bold flavours.
Fennel and dehydrated olive mousse
A delicate but intriguing start, with the sweetness of the fennel intertwined with the intense flavour of the olives. A small appetizer that immediately made the kitchen's approach clear: elegance and well-calibrated contrasts.
Raw-but-cooked Prussian Beef, mushrooms, whey garum, Korean mint
One of the most interesting dishes of the evening. The meat, tender and tasty, harmonized perfectly with the mushrooms and the garum, which added a strong umami note. The Korean mint gave a touch of freshness, balancing everything out. The game between raw and cooked was well done, without forcing.
Risotto “al contrario”, purple prawns, candied lemon and lettuce
A risotto impeccable for its creaminess and balance of flavors. The sweetness of the purple prawns married perfectly with the candied lemon, which gave a pleasantly citrusy contrast, without ever being excessive. The lettuce added a delicate herbaceous note, making the dish even more refined.
The experience was overall extremely positive, with a tasting journey that was able to surprise and conquer. A menu designed for those who love to be amazed without preconceptions, with a cuisine that dares and manages to do so with elegance.
08/02/2025: We tried two menus with the most traditional dishes of the Due Colombe, all courses were served and explained impeccably. We didn't like all the combinations equally, but we can't argue with the quality of the products.
The pumpkin entree is excellent, the purple potato with prawn is fabulous and the Milano bagoss parcels are an explosion of flavour. The wine pairings offered are also interesting. A valuable experience!
